August means lots of fresh vegetables from our gardens so here is a yummy recipe for your cherry tomatoes from my friend Diane. Best part of the recipe is that you can eat with corn chips!
Diane's Tomato Dip
2 cans black eyed peas
2 cans corn
1 pint grape tomatoes slices
2 Tbs vidalia onions diced
1 clove garlic minced
2 Tbs chopped cilantro
1 tsp chopped parsley
Zesty Italian dressing (I use a little less than half the small bottle)
Mix everything together.....if you like more of any ingredient, use more, or if you don't like something, don't use it. I do not put cilantro in, I use extra parsley.
Eat with Frito scoops!!
