Birth(week) Trip - Amelia Island

We had a great Birth Week trip to Amelia Island! Since my husband and I were born 5 days apart, we like to celebrate BIRTH WEEK when we can. And this year we could! We were both able to secure the time off so we took off to a place where we knew we could relax.

 

We got there and kicked off the week with a toast to Birth Week.

We then spent AS MUCH time as we could on the beach. Because we both run on the pale side, we stayed under umbrellas and slathered in SPF.

There was a lovely spa area in the hotel, so we spent some time there too.

And at the end of our week, we had a very special celebration dinner. Chef Rick Laughlin, the Chef de Cuisine at Salt Restaurant, created a 7-course dinner for us! We were positively blown away. The dishes included chilled pea soup with fresh lump crab, snapper ceviche, a pork adobo wonton with salmon and a Thai curry broth, steak-and-eggs on a hot salt block, and a soufflé/chocolate/macaroon dessert extravaganza. We are STILL beyond impressed with the skill of Rick’s team and how kind everyone was. We had a BLAST!

We loved the beach, the downtime, and the food for sure! Still, the best part of every year is being able to celebrate time with my sweet Mr. D. I just love him to bits and am grateful for every moment we have together.
