Chicken Enchilada Recipe - Similar to Chichi's - Anyone?

Does anyone remember how good the now defunct Chichi's chicken enchiladas used to be??? Ummm. They had this kind of whitish, cream like sauce on them which was awesome. And they were not spicy at all. Does anyone have a similar recipe or know how to make these? I've just been dying for these ever since this place closed. Thanks!

Chicken Enchiladas Supreme
Cook and prep time does not include cooking the chicken.
I usually use leftover chicken.

45 min

2 cups chopped cooked chicken or turkey meat
1 (4 ounce) can chopped mild green chilies
1 (7 ounce) can green chile salsa
1/2 teaspoon salt
2 cups heavy cream
12 corn tortillas
1 1/2 cups grated monterey jack cheese

Combine chicken, green chiles and green chile salsa and mix well.
Mix salt and heavy cream in a medium-sized bowl.
Heat about 1/2 inch oil in a small skillet.
Dip each tortilla into hot oil for about 5 seconds, just to soften.
Drain on paper towels.
Dip each fried tortilla into bowl containing cream and salt, coating each side.
Fill each tortilla with chicken mixture.
Roll and place in ungreased flat baking dish.
Pour remaining cream over enchiladas and sprinkle with cheese.
Bake uncovered at 350 degrees for 20 to 25 minutes.

Why do all the good things contain heavy cream? And no, I'm not open to substituting yogurt as so many cookbooks say you can.

I found this on all recipes..sounds good and its gotten some good reviews..I think I will make it using cream of chicken soup instead of mushroom....

I loved Chi-Chi's and was so sad when they closed. I loved their beef flautas with cheese sauce. I can't wait to make the Chicken Enchiladas Supreme recipe, thank you katkitty for posting.

Here is a recipe by RS poster Shamalangadingdong. I made these awhile back, upped the sauce and they were very good. I've never had the enchiladas in question but thought this was pretty similiar.

Chicken Enchiladas

1 tablespoon butter
1/2 cup chopped green onions
1/2 teaspoon garlic powder
1 (4 ounce) can diced green chiles
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup sour cream
1 1/2 cups cubed cooked chicken breast meat
1 cup shredded Cheddar cheese, divided
6 (12 inch) flour tortillas
1/4 cup milk

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.

In a medium saucepan over medium heat, melt the butter and saute the green onion until tender (about 3 to 4 minutes). Add the garlic powder, then stir in the green chiles, cream of mushroom soup and sour cream. Mix well. Reserve 3/4 of this sauce and set aside. To the remaining 1/4 of the sauce in the saucepan, add the chicken and 1/2 cup of shredded Cheddar cheese. Stir together.

Fill each flour tortilla with the chicken mixture and roll up. Place seam side down in the prepared baking dish.

In a small bowl combine the reserved 3/4 of the sauce with the milk. Spoon this mixture over the rolled tortillas and top with the remaining 1/2 cup of shredded Cheddar cheese. Bake in the preheated oven for 30 to 35 minutes, or until cheese is bubbly.

Question for KatKitty: have you made the Chi Chi's clone recipe that you posted? It contains only heavy cream for the sauce. It seems like that would be too runny. Does it thicken up while it bakes? Maybe the cream thickens as the cheese melts?
