I am looking for a good tried and true Quiche recipe for the Vegetarians at my Easter Dinner. Maybe one filled with multiple veggies, and one that doesn't take forever to make! Thanks for any help!! {#emotions_dlg.thumbup}

Not exactly a quiche, but an adaptation fothe old "Impossible pie" its always a big hit and you can use anything in the filling- and it is so easy!

2 cups asparagus, cut up

1/2 cup onion chopped

8 oz mushrooms sliced

butter for sauteing veggies

1 cup shreddded cheese- I use Swiss, but you can suse cheddar or mozarella or whatever

3 eggs

3/4 cup bisquick

1 1/2 c milk

1 tsp salt'1/4 tsp pepper

dash hot sauce

Grease or spray deep dish 9" pie pan

Saute veggies till tender, spread in pie plate, cover with cheese- mix all other ingred in blender or with whisk and pour over - bake 400 degrees 35-40 min- let it set at last 5 min before cutting for cheese to set up-

You can also use ham, or prosciutto, crab, bacon, bell peppers, green onoin, artichokes whatever you want- great way to use up leftovers!

This is a good one. I'm making it today. We're semi-vegetarian:

Spinach and Broccoli Quiche

1 deep crust unbaked pie shell

5 oz. frozen spinach

5 oz. frozen broccoli chopped into fairly small pieces

2 T. chopped onion

4 eggs (medium)

1 tsp lemon juice

1/4 tsp iodized salt

1/4 tsp black or white pepper

8 oz. cream cheese - softened

8 oz. sharp cheddar shredded cheese

6 oz. milk

Thaw and drain both spinach and broccoli. Blend other ingredients except 1/2 the shredded cheese. Add spinach and broccoli. Pour into pie shell. Bake at 375 degrees for 25 minutes. Put other 1/2 of shredded cheese on top, and bake another 5 minutes.

Yummy!

You really take just any basic quiche recipe and put in the eggs what you like, kind of like an omelet. I like mushrooms sauteed in garlic so the liquid is out and spinach, but roasted red peppers and spinach is also great. You can do a fiesta one with well sauteed peppers, onion, and mushrooms with chili spices. Quiches are really great for all kinds of things vegetarian and vegan if you use those substitute eggs. I like to make mine without a crust for less carbs so it is more like an egg pie/frittata (spelling) kind of thing.

has many of these if you look it up. I have a cook book

from them that has a whole section of them Ummmm!

Here are 2 more Greek Quiche Recipes...Enjoy Jan3111

Quiche recipe Greek Tres Spinach and Feta Cheese Quiche
Servings: 6-8 YIELDS

Ingredients
1 medium onion, chopped
3 tablespoons oil
1 (10 ounce) package frozen spinach, chopped, well drained
1 teaspoon salt
1 teaspoon dill
1/4 lb feta cheese, crumbled
4 ounces cottage cheese
3 eggs, beaten
1 cup cream (half and half)
1 deep dish pie shell (9-inch)

Steps
Preheat oven to 375°F
Chop onion and saute in oil 5 minutes.
Add frozen spinach in the 3 tablespoons oil and continue cooking, stirring often until all liquid is gone.

Transfer to a bowl and add remaining ingredients.
Pour mixture into unbaked pie crust and bake degrees for 30 to 35 minutes or until knife inserted into center comes out clean.

Quiche Greek Quiche
Ingredients

1 Ready to bake pie crust
2 6 oz Greek Non Fat Yogurt
3 eggs
2 Leeks
1 Small Sweet Onion
1 T Olive Oil
1/2 t salt and pepper
pinch Fresh Ground Nutmeg
1/4 Cup Grated Parmesan
1/3 Cup Non Fat Grated Mozzarella

Steps
Slice leeks in half lengthwise and thoroughly wash and then thinly slice
Sauté leeks in olive oil for 5 minutes
Finely chop onion and add to leeks, continue cooking for 10 minutes
While leeks and onions are cooking combine eggs, yogurt salt, pepper, nutmeg and mozzarella
Add leeks to egg mixture and mix well
Fill unbaked pie crust with quiche mixture and top with grated parmesan
Bake in center of oven for 35-40 minutes or until center is set
  • Let rest for 10 minutes prior to serving
