(This is an easy, fast and tasty meal that you will want in your rotation). To make it even faster, I most always have a bag of frozen, peeled/cleaned shrimp in the freezer.

  • 1 lb medium shrimp, shelled and deveined
  • 2 tablespoons taco seasoning mix
  • 3 garlic cloves, minced
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 ripe avocado, pitted, peeled and diced
  • 12 taco shells or small flour tortillas
  • 2 cups lettuce, shredded (I use fresh baby spinach leaves)
  • 1 medium tomato, chopped (I use halved grape tomatoes)
  • 3/4 cup salsa
  • (optional) sour cream... (my family likes this addition)
  1. In medium bowl, combine shrimp, taco seasoning, garlic and 2 T. lime juice; toss to coat. Let marinate for about 10 minutes or so
  2. Heat oil in large skillet over medium high heat.
  3. Add shrimp mixture; cook and stir 2 to 4 minutes or until shrimps turn pink.
  4. Remove shrimp from skillet; place on plate.
  5. cook remaining juices in skillet for 3 to 4 minutes or until thickened, stirring occasionally.
  6. Return shrimp and coat with juices.
  7. Remove from heat.
  8. In small bowl, toss avocado with remaining lime juice.
  9. Spoon shrimp mixture into taco shells.
  10. Top with lettuce, avocado and tomato.
  11. Serve with salsa and (sour cream, if desired)

Thanks.......love tacos and shrimp so this will be a nice change from regular tacos. Sounds good....will try soon.

Did you use real lime juice? I know lime juice is strong either fresh or bottled, you didn't find it too strong?
