Shrimp (Chicken), Vegies, and Pesto Pasta!

This is something I whipped up from using what I had in the fridge. It's now an "addiction".! Can't wait for summer tomatoes, then I'll add halved small ones!

1 lb pealed, deveined shrimp or chicken cut up

1 -2 small zuchnini squash cut in small pieces

2 small yellow squash, cut in small pieces

6 green onions and greens, chopped

Butter

2 Tsp olive oil

Salt, pepper

Pasta noodles for four (we like thin spagetti)

1/3-1/2 c pesto

1/2 C grated fresh parmesian cheese

Start water to boil for pasta with 1 tsp olive oil. Boil for 8-9 minutes.

Drain and toss with pesto.

In skillet with olive oil lightly brown all vegies with light salt and pepper.

Add shrimp. Stir fry until done.

If using chicken, brown first, then vegies, then return chicken.

Transfer to hot platter:

Hot pasta, vegies and shrimp or chicken.

Sprinkle with grated parmesian cheese.

Enjoy!
