I got this from a Dione Lucas Book of French Cooking from the 70s. It's simple, but delicious.

3 slices of bacon, chopped

3 tablespoon butter

3 Russet potatoes, peeled

1 large onion, sliced into rings

Heat a large shallow pan (with a lid) over medium heat

Cut each potato in half, lengthwise. Then cut each half into 4 chunks. Set aside.

Place the bacon and butter in the pan.

After the butter has melted, layer potatoes and onions.

Add pepper.

Cover and let cook until it's done to your liking (at least 20 minutes). Shake once during cooking.

Get your flu shot...because I didn't.
