Diabetic Cookie or cake recipes

I have tried Splenda and stevia. I can't stand them in baking. I have found that the Splenda brown sugar is very good. Any recipes you guys can suggest for cookies or cakes. Thanks and stay well.

I have yet to find a tasty diabetic cookie that my husband will even touch. Therefore, if we're going to have a cookie, we go for the real thing, but limit ourselves. Generally, we buy frozen cookie dough, and just bake a few at a time. We do not use artificial sweeteners in this house.

QVC used to sell something - I think it was called Joseph's Cookies - but they don't seem to have them anymore. A young man presented them and said his Mother had formulated them for him since he was a serious diabetic. They were quite tasty and there were several varieties.

Wishs they would get them back.

I agree, I haven't found anything really good so far, but I'm still trying. I recently got a new Diabetic cookbook. If I find anything I'll post it.

Have you tried the Peanut butter cookie?

1 cup Peanut butter

1 cup brown sugar Splenda

1 egg

I usually double the recipe and use 1 cup of creamy peanut butter and 1 cup crunchy.

I just eat the real thing in small amounts. I dont care what anyone says sugar free is terrible..

According to my personal doctor, a serious diabetic is one who is experiencing high AlC scores and does not include those who are pre-diabetic.
