These are loosely based on an old Pillsbury Bakeoff bar cookie winner that I made (IMHO) better... {#emotions_dlg.thumbup1}

CHERRY BLOSSOMS

CHERRY BLOSSOMS

For the cupcakes:

1 pkg. devil's food cake mix (I used Aldi's)

1 can cherry pie filling

3 large eggs

1 tsp. almond extract

1/2 cup mini chocolate chips or nuts (optional)

Mix all ingredients together by hand in a large bowl; divide equally among lined muffin cups, filling 2/3 full. (I got 20.)

Bake at 350° for about 20 minutes until the top springs back when lightly pressed.

For the Cherry Buttercream:

1 stick (4 oz.) unsalted butter

1 pkg (8 oz.) cream cheese

4-5 cups powdered sugar

1/2 tsp. vanilla extract

1 tsp. cherry extract

couple of drops of red food coloring

1 jar maraschino cherries

Beat butter & cream cheese at high speed until fluffy, adding sugar a cup or so at a time until you get the consistency you want; add extracts. If you need to thin the frosting a bit, use the juice from the jar of cherries.

Pipe the frosting onto the cupcakes, and place a cherry on top of each for decoration.

I also sprinkled the top with crushed cherry-vanilla bark. {#emotions_dlg.biggrin}

How good are these? Well, let me tell you...

When I had an eye injury and couldn't use the computer to monitor my bank balance, I inadvertently got an overdraft...with a steep fee.

Took some of these to the bank next time I had to go.

Fee gone! {#emotions_dlg.thumbup}

Walker, in that case you want donuts. Wink

In fact, I took some pumpkin maple donuts to the mechanic today and asked about getting my broken light fixed. He said I could get the part cheaper on eBay, and once it comes in he'll put it on for free! {#emotions_dlg.thumbup}
