Honeycrisp Apple Cranberry Pecan Conserves

3 Honeycrisp apples, finely chopped

1/2 c. dried cranberries

1/2 c. water

2 Tbs. lemon juice

1 pk. powdered pectin

2 3/4 c. sugar

1/4 c. pecans, chopped

Place first five ingredients in large sauce pan and slowly bring to a boil. Add sugar and bring back to a rolling boil that can't be stirred down and boil for exactly one minute. Remove from heat and add pecans. Pour into prepared sterilized hot jars, add lids and rings and process in hot water bath for five minutes. Good to use as a spread or with pork.

Makes 4 half pints

This sounds delicious! Honey Crisp are our favorite apples!

I don't can...do you think I could just make this and freezer?

You can keep it in the fridge, I don't know about the freezer, but it doesn't make so much, it is really good.

Thanks! I hope to make it this weekend and serve over a pork loin.

But can't you just taste it warm over vanilla bean ice cream? Or a pound cake...or angel food cake...or...

It is supposed to be really good served with pork, I spread it on a hot biscuit the other morning...I could eat it by itself! lol I hope you like it.

I make a dessert every Sat. night for our church group (about 15 people) and I am trying to think of something different cakes/pies/tarts/cheesecakes etc.

I am leaning towards making a pound cake and bringing this warm to serve over top.

Do you think that would work?

I think it would, it is sweet and tart at the same time. I took some to church Sunday with some small biscuits and it was a hit. I would love it on pound cake. It is especially good on bagels too.

I just ate a Honey Crisp for lunch and can just imagine how good the above recipe would be!

Our Honey Crisp at the farmer's market down the road have been really LARGE this year! Were the apples you used in the above pretty good sized ones?

Since I am not a canner...I had a tough time finding what aisle that Pectin was in!

There were 2 size boxes...I bought 1.75oz. It has one pkg. inside.

Is this the right size for the above recipe?

The box I used was the size of the small Jello boxes, it had one package in it. The Honeycrisp Apples are a good size here too. It still worked well.
