I have been looking for new ways to the Costco rotisserie chicken. I recently posted a Thai Chicken Salad that I liked. Saw this on The Chew and thought it was worth a try.

Dressing:
6 T honey
2 T yellow mustard
2 t balsamic glaze
1/2 cup mayo

Salad:
1 large to 2 small rotisserie (one Costco works fine)
1/2 cup toasted pecans, roughly chopped
1 cup golden raisins
1/2 cup chopped fresh Polbano pepper
1/3 cup chopped red onion

Boston Bib lettuce

Mix all dressing ingredients together and set aside.

Remove the skin and pull rotisserie chicken apart in shreds by hand.

Place raisins in a bowl and pour boiling water over to plump. Drain.

Mixed chicken, pecans, raisins, peppers and red onion. Mix with dressing. Serve with Boston Bib lettuce to wrap in and eat.

NOTE: I really like these tastes but a little too sweet for me. Next time I make it I am going to cut honey to 4 T instead of 6 T but that is all just a matter of taste. Might try 1/2 t of curry also in dressing.

FUNNY NOTE: I needed 2 T of yellow mustard which I do not stock or use. Went to three neighbors to borrow it and they did not have it either so had to purchase French's yellow mustard. Now have to figure out how to use it up - at least it was cheap.

I wish there spices were available in containers that just held a tablespoon. I needed some allspice for an apple crisp and even the small bottle will expire long before I can use it up.
