Tropical Beef With Noodles Or Rice

1/2 C flaked coconut

1 pound ground beef

1 clove garlic...minced (I put it through a garlic press)

1/4 teaspoon salt

1/8 teaspoon nutmeg

1 Tablespoon lemon juice

1 Tablespoon soy sauce

2 Tablespoons cornstarch

1 (8 ounce) can pineapple chunks...drain and .RESERVE JUICE

1 (16 ounce) can mandarin oranges....drain and RESERVE JUICE

1/3 cup cashews

hot cooked egg noodles OR hot cooked rice

In a large skillet, lightly stir coconut over medium heat until golden brown and crisp. Remove from pan and set aside. In the skillet, brown beef with garlic. Stir in salt, nutmeg, lemon juice and soy sauce. In a small bowl, combine the reserved juices from the fruit and the cornstarch. Blend well. Stir cornstarch mixture into ground beef and stir mixture until the mixture is clear and thickened. Stir in pineapple and oranges and continue to cook for 5 minutes over medium heat. Sprinkle with coconut and cashews. Serve over hot cooked noodles or rice.

sounds so good to me LilBit and I do love coconut and pineapple together and buttered noodles is a main stay for me so, thanks so much for this recipe, sounds great.
