Here's another new recipe from Lizzy Early. And buy her cookbooks - they're wonderful! :)


Golden Oreo Cupcakes

/><br/>  <br/>  <span style= Ingredients

Yellow Cake:
20-24 Golden Oreos
1 box yellow cake mix
3 eggs
1/3 C. oil
3/4 C. sour cream
1/2 C. milk or butter milk
2 tsp. vanilla extract

Cream Cheese Frosting:
8 oz. cream cheese
1/2 C. butter, softened
2 tsp. vanilla extract
1 Tbsp. milk
3-4 C. powdered sugar

Extra Golden Oreos for decoration

Directions

1. Preheat oven to 350 degrees and line pans with cupcake liners.

2. Place an Oreo on the bottom of each liner.

3. Sift cake mix into a large bowl to remove any lumps.

4. Add eggs, oil, sour cream, milk and vanilla extract and stir until smooth.

5. Fill cupcake liners (over Oreos) until about 3/4 full.

6. Bake for 15-20 minutes or until an inserted knife comes out clean. (Depending on your oven you may want to bake on a higher rack to not burn the Oreos on the bottom, some ovens get extra hot from below, so be careful!)

7. Let cool.

8. Cream Cheese Frosting: Beat cream cheese and butter until smooth. Add vanilla extract, milk and 2 cups. powdered sugar an beat again. Continue to add more powdered sugar until you reach your desired consistency.

9. Pipe onto cooled cupcakes and top with an extra Golden Oreo!

BTW, for those of you who like the Lemon Oreos, I'm thinking you could use them and a lemon cake mix. {#emotions_dlg.thumbup1}

Looks yummy! Since I have a house of chocolate lovers, I might make it with the regular Oreos and use mini ones for garnish.

I made Cookies & Cream cupcakes yesterday - I'll post the recipe later for you. {#emotions_dlg.biggrin}
