Is there anyone here who has an easy Curry Chicken recipe please.

2/3 cup of coconut cream

6 scallion, sliced

2 tablespoons (or to taste) of red or green curry paste

2 chicken breasts, cut into chunks or strips

Heat coconut cream over medium heat. Add curry paste. Add scallion and chicken. Cook for 30 minutes.

Get your flu shot...because I didn't.

1/2 cup honey

4 tbs butter (melted)

2 tsp curry powder

1 tsp salt

4 tbs djon mustard (i use spicy brown)

mix and pour over chicken (I use thighs)

put in 9x13 pan, cook for 50 minutes at 350 or until skin is golden brown

you welcome, I made this Monday night. I half the recipe though, it is just my husband and myself, works well for 5 thighs. I have given this recipe to a lot of people and they love it.

If you have a food processor than this would be an easy one for you. Its a cashew chicken curry, one of my favorite dishes. Its slightly modified from the original to simplify things.

Ingredients

  • 3/4 cup roasted, salted cashews
  • 1/3 cup plain yogurt
  • 1/4 cup roughly chopped cilantro
  • 1 Tbsp mild or hot curry paste
  • 2 lbs skinless, boneless chicken thighs, cut into 1" pieces
  • 1/2 cup water
  • salt & pepper
  • 1 Tbsp olive oil

Instructions

  • In a food processor, blend cashews until finely chopped. Add yogurt, cilantro, curry paste, salt and pepper and process until smooth.
  • 2. Cut In a large skillet, heat oil over medium high heat. Brown chicken thigh pieces, about 4 minutes per side. Scrape all of the sauce over the chicken with water. Stir until blended, reduce heat to maintain a simmer and cover. Cook until chicken is cooked through, about 15 minutes. Let sit, covered for 10 minutes. Serve over spaghetti squash and garnish with chopped roasted cashews and cilantro.

Where would I find curry paste? We don't have specialty stores here, so maybe Amazon? Brand?

Curry chicken is very fast and easy. Chicken,potatoes, carrots, onions, garlic & Golden curry sauce mix.

I find curry paste in regular grocery stores. Mine have ethnic /asian food section and there are many choices there. I live in Toronto, Canada. If your grocery store doesn't carry anything like that, its not hard to make but requires lots of ingredients, spices mostly:

  • 3 tbsp coriander seeds

  • 2 tbsp cumin seeds

  • 1 tbsp mustard seeds

  • 1 tsp fennel seeds

  • 1 tsp black peppercorns

  • 1 tsp ground turmeric

  • 1 tsp ground cinnamon

  • 1 tsp paprika

  • 1 or 2 dried chillies, depending on personal preference

  • 1 tsp salt

  • thumb-size piece fresh root ginger, peeled and finely grated

  • 4 garlic cloves, finely grated

  • 1 tbsp tomato purée

  • 4 tbsp white wine vinegar or cider vinegar

  • vegetable or sunflower oil, to cover the paste for storing

Dep, you can find red or green curry paste in the ethnic section of any market. It's made by Thai Kitchen.

You can also make your own. I haven't done this, since Thai Kitchen works well for me.

I also order various pastes from Thai Grocer, an online market. Their shipping is worse than QVC's, so that's rare.
