Lemon Glazed Zucchini Cookies

When you have an abundance of zucchini, this is a good recipe that everyone will enjoy. The addition of the lemon makes this cookies standout from all the rest. I hope you enjoy it

LEMON GLAZED ZUCCHINI COOKIES

3/4 cup (1-1/2 sticks) butter, softened
3/4 cup sugar
1 egg
1 teaspoon lemon juice
1 teaspoon grated lemon peel
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup grated zucchini, unpeeled, patted dry (avoid grating the inside seeded part)
1 cup chopped walnuts

Preheat oven to 375 degrees F. Coat baking sheets with cooking spray.
In a medium bowl, cream together butter and sugar until light and fluffy.
Beat in the egg, lemon juice, and lemon peel. Stir in flour, baking powder, and salt just until dry ingredients are mixed in. Stir in zucchini and nuts.
Drop by rounded teaspoonfuls 2 inches apart onto baking sheets. Bake 12 to 15 minutes, until cookies are golden around the edges. Remove to a wire rack to cool completely.

LEMON GLAZE: Combine 1/2 cup confectioner's sugar and 2 teaspoons fresh lemon juice.. mix until smooth. Drizzle over cooled cookies.
