Not exactly the right season for this but if you like sweet potatoes this is really good.
3 pounds sweet potatoes (I use garnet yams)
2 T good quality balsamic vinegar
1/2 t ground cinnamon
1/4 cup nonfat sour cream.
Pre-heat oven to 425.
Push fork into sweet potatoes in several places and put on a baking sheet in middle of oven. Bake until very tender about 1-1/4 hours depending on size. When potatoes are cool enough to handle, remove skins and discard. In a food processor blend potatoes with vinegar and 1/4 t cinnamon until smooth. Transfer to a bowl and stir in sour cream until well combined. Sprinkle with remaining 1/4 t cinnamon.

What a coincidence. I just harvested my sweet potatoes yesterday. I'm going to try it.

Oh I have become a balsamic vinegar junkie! We are having leftover chicken that was marinated in balsamic vinegar, basil, garlic, onion and olive oil and then charcoal grilled! Wish I had a sweet potato.

I like to make sweet mashed potatoes and this is a different twist on them. I will be trying this. Thanks for sharing.
