Just copied the zucchini recipes on here (and in the history part)

I'm wondering if we have any new ladies on here this year, for this season, who might like to contribute some of their favorite zucchini recipes? I'm still trying to rebuild my collection of zucchini recipes, I have NO idea where all the ones went to that I once had. {#emotions_dlg.blink} I need a little icon who has eyes that roll around like loose marbles (to match the brain!) LOL

DH just made Zucchini Bread this weekend. YUM!!!

Zucchini Bread

3 cups all-purpose flour

1 teaspoon salt

1 teaspoon baking soda

1 teaspoon baking powder

3 teaspoons ground cinnamon

3 eggs

1 cup vegetable oil

2 1/4 cups white sugar

3 teaspoons vanilla extract

2 cups grated zucchini

1 cup chopped walnuts

Grease and flour two 9 x 5 pans. Preheat oven to 325°

Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.

Beat eggs, oil, vanilla, and sugar together in a large bowl.

Add sifted ingredients to the creamed mixture, and beat well.

Stir in zucchini and nuts until well combined. Pour batter into prepared pans.

Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean.

Cool in pan on rack for 20 minutes. Remove bread from pan & completely cool.

DH used 5 pans 6 x 3 1/2 x 2 small tinfoil loaf pans. Cooked for 50 mins.

This is my exact recipe and it never fails! I have added choc chips or lemon zest and a lemon glaze before but the basic recipe is still so perfect I don't usually..I have made this twice already this season. Yum is right!

Do you all find it best to use a box grater to grate the zucchini or do you use the food processor?

I can't believe that of all the ways I've used zucchini I've never grated it for bread.

The lemon zest & lemon glaze sound delish. I use Penzey's cinnamon & it smells so good while it's baking. I sifted the 1st 5 ingredients & grated the zucchini while DH got busy mixing the next 4 ingredients & greasing & flouring the pans. Can you post your lemon glaze recipe. TIA

I had to edit out the recipe when I replied because it was all scrambled for some reason.

ZUCCHINI CASSEROLE

3 cups zucchini

3 medium carrots, shredded

1 small onion, grated

1 can Cream of Chicken Soup, undiluted

1/2 cup sour cream

1/2 pkg Pepperidge Farm Stuffing

1/3 cup melted butter

CUT unpared zucchini into bite-sized pieces.

Lightly boil and drain.

Mix stuffing mix and butter.

Mix all ingredients with 1/2 of the stuffing/butter mixture.

Put in casserole and top with balance of stuffing mix.

Bake 350 degxrees for ~30 minutes. Can be frozen.

ZUCCHINI PASTA CASSEROLE

Spray 9" x 13" pan with Pam

Layer the following in the pan:

Zucchini, cut in 1/2" slices

1/2 lb. dry Spaghetti, broken in thirds

1 Large can Crushed Tomatoes, season w/spices, onions, garlic OR any kind of tomato sauce or meat sauce. About 2-1/2 - 3 cups.

Add ~1 cup of water

Bake at 375 degrees for 50 minutes.

Top with cheese. Bake till bubbly and brown.
