Hey everyone, I need a wonderful moist carrot cake recipe for my sister in-law! she is here until Thursday from California, and I thought why not ask all you wonderful cook's!
she does not like coconut or pineapple in it!! anything you have would be wonderful!!!

Here's a basic recipe I've used for years. I've even made wedding cakes using this recipe. I do add pineapple, coconut, raisins and chopped walnuts to the batter but you can leave those out.
'SOUTHERN HERITAGE' CARROT CAKE
Makes 16 servings
2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
4 eggs
1 1/4 cups vegetable oil
2 cups granulated sugar
3 cups grated carrots
Cream Cheese Frosting
Preheat oven to 350 degrees.
Grease and flour two 8- or 9-inch round cake pans (baking sprays that contain flour, such as Baker's Joy, are fine to use as well).
Sift together the flour, baking powder, cinnamon and salt; set mixture aside.
Combine eggs, oil and sugar; beat until smooth. Whisk in the flour mixture and the carrots.
Pour the batter into the prepared cake pans.
Bake for 40 minutes or until a wooden pick inserted in center comes out clean. Cool in pans for 10 minutes; remove from pans to wire racks and let cool completely.
Ice with Cream Cheese Frosting
CREAM CHEESE FROSTING
Makes 16 servings
1 (8-ounce) package cream cheese, slightly softened
1/2 cup (1 stick) unsalted butter, slightly softened
1/2 cup vegetable shortening
1 (1-pound) box confectioners' sugar, sifted
1 teaspoon lemon oil or extract
Using an electric mixer with a paddle attachment, mix together the cream cheese, butter and shortening until creamy. Add the confectioners' sugar and lemon oil and mix until smooth and light.

Margie that looks good , Could i add half sour-cream and half oil?

That might throw the chemistry off so I'd use all oil or maybe an oil and apple sauce blend.

MargieRJ: Thanks for sharing your recipe for 'Southern Heritage' Carrot Cake. When you add the additional -pineapple, coconut, raisins and chopped walnuts-how much of each to you include in the recipe? I would probably add all of those to the batter--the cake sounds delicious! I will look forward to making this for my family.
