I have never been a fan of rice pudding but I took a cooking class last week and this was the dessert. I have changed my mind!

2 cups sweet brown rice
4 cups water
1 (14-1/2 oz) can coconut milk
1/2 cup white sugar
1/4 cup brown sugar
2 cups diced tropical fruit such as mango, papaya, pineapple, banana, etc. in any combination

Steam the rice with water in a heavy pot or rice cooker for 20 minutes or until grains are tender. Stir in the coconut milk and sugars. Cook for 5 minute more.

Spoon into dessert dishes and top with the fruit.

They served mango and banana on top in my class. Good combination.
