My new favorite mashed style potatoes - these were soooooo goooood!

Not for everyday, due to the cup of heavy cream, but these were soooo good and so easy to make. Definitely nice to serve for company.

Garlic Smashed Potatoes

  • 4 lbs small red potatoes
  • 1 full bulb of garlic
  • 1 cup heavy whipping cream
  • salt and pepper
  • extra virgin olive oil
  • 1 tablespoon butter

  1. Cut top off from the garlic bulb to expose the several garlic cloves inside.
  2. Drizzle with EVOO and sprinkle with salt and pepper.
  3. Wrap bulb in foil.
  4. Place in 425 degree oven for 30 minutes.
  5. Bring water to a boil.
  6. Cut red potatoes in 1/2 and put in boiling water. Salt the water and cover the pot. Cook until tender. The potatoes should be ready in approximately 20 minutes.
  7. Drain potatoes.
  8. Pour cream and 1 tablespoons butter in hot pot and warm on the stove while potatoes drain.
  9. Squeeze garlic from the bulb into the pot.
  10. Salt and pepper to taste.
  11. Add potatoes to pot and smash.
  12. Stir and enjoy.

Sounds good but fattening.

Sounds yummy, I'll have to try it when my brother comes over: he likes basic mashed potatoes, not whipped, so was thinking of trying something a little different. Thanx.

Sounds really good...I love garlic....and I'm a big fan of fat, too! And I think we all know as far as fat goes, there are always options. Try making it with half and half, then whole milk, then 2%. You might be surprised at how low you can go.

Sounds delish. Good for a special treat meal for my husbands birthday. Maybe with filet mignon or a rib eye with sauted mushrooms and spinach.
