Texas Skillet Dinner

Texas Skillet Dinner

1 pound lean ground beef

1 teaspoon chili powder..(more to taste)

1/2 teaspoon salt

1/2 teaspoon garlic salt

1 (16 ounce) can stewed tomatoes

1 (8 ounce) can tomato sauce

1 (16 ounce) can kidney beans

1 package egg noodles

3/4 cup water

1 cup cheddar cheese...shredded

crushed corn chips

Cook and drain noodles. Brown beef. Drain. Mix everything EXCEPT cheese together and simmer 20 minutes, Top with cheese , cover and heat til cheese melts. Sprinkle with crushed corn chips.

Your killing me LilBit absolutely killing me. It is 4:00 in the afternoon here and long past lunch and way to early for dinner for your to be posting these things!!

Do you realize how many of your posts (including this one) I have printed out?? Will need to order more copy paper and call it my LilBitMissty stash!!

Seriously, keep them coming I do love it!! Headed to the library now for some books on hold for me and then to my kitchen for some FOOD!!

I can't wait to try some of these. I have had great success with your famiily recipes and look forward to your posts. We recently had your polish sausage dish last week again.

I went grocery shopping today, so I have plenty of ingredients on hand to make most of these recipes

However it's worth it to me to post my cherished recipes when I know people enjoy them as much as my family has. I am just glad to see they will "live on". Oh yes..the polish sausage casserole. I have a ton of LitBit recipes myself. She is awesome!

I copy & paste them into an email to myself, then slide them into the recipe folder. I can then print as needed or use use my netbook in the kitchen.

Oh my goodness!

This recipe really makes my mouth water! My mom made dishes like this when I was growing up, but she rarely ever wrote them down. I remember coming home from school, and smelling the aroma of moms cooking coming from the kitchen. I loved her cooking. She lives with me now, but at 93, she doesn't remember many of her recipes. I learned to make a lot of them growing up, thank goodness, but I wish we had had the forsight to write them down all those years ago.

This reminds me of one she used to make, that I never made, but I'm going to make yours!

Don't laugh, I thought I had pretty much memorized the recipe. Made it and for some reason I thought it called for an onion! I guess because my mother's 95 year old cousin makes a similar dish called "goulash" here in the midwest. I didn't even do the macaroni and loved it. So easy and was thinking if you thicken up the sauce it would be good with mashed potaotes. Thanks so much for recipe LilBitMissty!

Made this tonight and it was very good! Thanks LBM! I used what I had in the pantry and I kicked up the heat quotient a bit....

Substituted: Rotel Tomatoes and chilis for the regular canned tomatoes

Ranch Style Beans for the can of kidney beans (also called chili beans in other

parts of the country.

Used Crushed Fritos and served those at the table for DH to add if he wanted

them!

Very tasty and have enough for another meal. This is one of those recipes that even tastes better the next day!

LilBitMissty - We had this for dinner tonite & it's ANOTHER WINNER! Not only was it easy to prepare but it fed all 4 of us w/ leftovers to boot. Everyone really liked it. Thank you so much for sharing! I almost forgot the chili powder (you remember how i am the first time i try a recipe, i usually forget something) but at the last minute i caught it. It was great & will stay in our rotation. Also my husband referenced your Deep Dish Taco Squares as well & how much he liked those. I think i need a "LilBitMissty" Family cookbook in my home!

LilBitMissty, you did it again. My mom and gram made this so often but just called it Spanish noodles. I wanted to post here asking for Spanish noodles so very glad to see you posted this, is the exact same thing other than they didn't use corn chips, otherwise, same thing. thanks so much. I am sure no one would have known what I was talking about asking for Spanish noodles.

This recipe made me smile. Like others, it brought me back to my childhood sixty years ago. My mother was a great cook who could produce something so delicious even when all she had to work with were some potatoes and onions and a small amount of cheap beef. My mother's variation did not include the chili powder. Not sure what her seasonings were but we were old New Englanders through and through so I guess chili powder would have been very exotic at the time! Thanks for the trip down memory lane! This is one forum I can enjoy that doesn't get mean and contentious.

My kind of meal. I think I will try using the Rotel(hot) and use dark red kidney beans! Like adding the fritos! Thanks for another great recipe, LBM!
