This recipe came from a diabetic cookbook, but you would never know it by the flavor. I've been making this for years.

CROCKPOT STUFFED PEPPERS

6 large "tall" bell peppers (green, red, yellow)

1 lb ground beef (you can pre-brown in skillet if you like)

1 cup rice (uncooked)

1 onion (chopped)

1 carrot (shredded)

1 tsp beef boullion granules

1/2 tsp salt

1/2 tsp pepper

1 can condensed Tomato Soup

1 (soup) can water

Cut off tops of peppers and clean out seeds, and ribs. Set aside.

Combine ground beef, uncooked rice, onion, carrot, boullion, salt and pepper in a large bowl. Add what ever extra spices you might like to the mixture. Stuff each pepper with the mixture and stand the peppers up in the crock pot.

In a small bowl, combine tomato soup and water, and pour evenly over the peppers.

Cook on low for approximatley 6-8 hours. Enjoy!
