Vitamix 100% whole wheat pizza dough-delicious!

I made this last night and it was so easy and delicious. I used the dough cycle in my bread machine and then rolled it out, but you can certainly knead this by hand or in your sturdy stand mixer with a dough hook. This was a delight to roll out-I did not have to fight "pizza dough recoil". Ordinarily I add vital wheat gluten to just about every bread I make, but I did not add it this time. I was worried if this was going to turn out because of the amount of yeast and salt it used-alot for roughly 3 cups plus of flour, but it did indeed turn out perfectly. Enjoy!

In two seperate batches, mill 4 cups of winter wheat berries in your dry blade container.

In your bread machine or mixing bowl add in this order:

1 1/2 cups water

1 tablespoon olive oil

3 1/4 cups whole wheat flour

1 tsp sugar

1 tsp salt

1 tablespoon of yeast (I use SAF)

Use the dough cycle in your bread machine. The dough is ready to roll out when you remove it.

If kneading by hand, you know the routine, right?

Top with your favorite ingredients and bake at 425 degrees for about 20 minutes. Enjoy!
