Peach Stuffed Chicken Breasts With Peach Sauce
6 whole chicken breasts...skinned and boned
1 teaspoon salt
1/8 teaspoon pepper
1/2 cup butter
3 fresh ripe peaches..,peeled and diced
1/4 cup onions...chopped
1/2 cup cashews...chopped
1/8 teaspoon ground ginger
Place each chicken breast on a piece of wax paper. Using a meat mallet or a rolling pin, flatten each to 1/4 inch thickness. Sprinkle insides of breasts with salt and pepper. Set aside. Combine peaches, onion, cashews and ginger. Stir well. Place 1/4 cup filling on each breast. Fold sides over and secure with a toothpick. Melt butter in a 9x13 inch pan. Place breasts top sides down in pan. Bake at 375* for 25 minutes Turn chicken and cook an additional 20 minutes. Serve with peach sauce.
PEACH SAUCE
1/2 cup sugar
2 tablespoons cornstarch
1/2 teaspoon nutmeg
2 tablespoons lemon juice
1 1/2 cups water
1/2 cup fresh peaches...peeled and diced small
In a saucepan, combine sugar and cornstarch. Add nutmeg, lemon juice and water. Heat stirring til thickened. Stir in peaches and heat through.
