Vegetarian Christmas Eve Meal????

I will be going to Northern Virginia to visit with my daughter and her family for Christmas. She wants to start a tradition of having a Christmas Eve dinner. We started out doing fondue for the past few years, but nothing ever worked out the way we wanted, so she is asking me for ideas. I am not a vegetarian, but they are and I am, when I go visit. Can anyone suggest something that we could do that is a little special? I thought about telling her to just do a pasta with marinara sauce, garlic bread and salad, but I thought she would probably say that is so blah. Anyone have any ideas? Thanks so much.
