9 x 13 Pans--What is your favorite recipe for one?

Since we were talking about pans, and everyone likes the 9 x 13 it seems, I thought it would be fun to post our favorite go-to all-time-best recipes for them. Without a doubt, mine is King Ranch Casserole! I switch it up, sometimes use plain tomatoes and hot sauce rather than the Rotel, and may or may not use as much cheese, or a white cheese of some sort. And I often add more chicken--always white breast meat.

I am crazy for this stuff and always have been! I've never had guests turn it down either (unless it was too hot--which happened a time or two)!

What is your favorite? Lasagna runs a second to this one for me!

King Ranch Casserole---from Southern Living Magazine

  • 1 large onion, chopped
  • 1 large green bell pepper, chopped (red is even better--or a mix of the two)
  • 2 tablespoons vegetable oil
  • 2 cups chopped cooked chicken (white meat--and more is better)
  • 1 (10 3/4-ounce) can cream of chicken soup, undiluted
  • 1 (10 3/4-ounce) can cream of mushroom soup, undiluted
  • 1 (10-ounce) can diced tomato and green chiles
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 12 (6-inch) corn tortillas
  • 2 cups (8 ounces) shredded Cheddar cheese, divided

Instructions

Sauté onion and bell pepper in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Stir in chicken and next 7 ingredients; remove from heat.

Tear tortillas into 1-inch pieces; layer one-third of tortilla pieces in bottom of a lightly greased 13- x 9-inch baking dish. Top with one-third of chicken mixture and 2/3 cup cheese. Repeat layers twice.

Bake at 350° for 30 to 35 minutes.

Note: Freeze casserole up to 1 month, if desired. Thaw in refrigerator overnight, and bake as directed.

Hmm, I have a lighter version of this recipe and was wondering what to make for dinner tonight. I'm on vacation - made hibachi chicken last night. My BF said something simple tonight. Of course, my lighter version is more labor intensive than what I really want to do today. LOL - but this sounds so good.

Mine would have to be the Chicken Enchiladas.... I don't know who posted it first but it is all over Pinterest!

Chicken Enchiladas with Green Chili Sour Cream Sauce

*These are seriously so so good*

10 soft taco shells

2 cups cooked, shredded chicken

2 cups shredded Monterey Jack cheese

3 Tbsp. butter

3 Tbsp. Flour I added ONIONS. Yum!

2 cups chicken broth

1 cup sour cream

1 (4 oz) can diced green chilies

1. Preheat oven to 350 degrees. Grease a 9x13 pan

2. Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.

3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly. Do not bring to boil.

4. Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream.

5. Pour over enchiladas and top with remaining cheese.

6. Bake 22 min and then under high broil for 3 min to brown the cheese.

Take out of oven as soon as you see bubbles - before it boils! Enjoy!

I half this recipe and make in a smaller pan in my Breville Mini oven! Enough for 2!

This is the only lasagna recipe that I follow exactly!

Ina Gartner's Turkey Lasagna

2 tablespoons olive oil
1 cup chopped yellow onion (1 onion)
2 garlic cloves, minced
1 1/2 pounds sweet Italian turkey sausage, casings removed
1 (28-ounce) can crushed tomatoes in tomato puree
1 (6-ounce) can tomato paste
1/4 cup chopped fresh flat-leaf parsley, divided
1/2 cup chopped fresh basil leaves
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1/2 pound lasagna noodles
15 ounces ricotta cheese
3 to 4 ounces creamy goat cheese, crumbled
1 cup grated Parmesan, plus 1/4 cup for sprinkling
1 extra-large egg, lightly beaten
1 pound fresh mozzarella, thinly sliced

Directions

Preheat the oven to 400 degrees F.

Heat the olive oil in a large (10 to 12-inch) skillet. Add the onion and cook for 5 minutes over medium-low heat, until translucent. Add the garlic and cook for 1 more minute. Add the sausage and cook over medium-low heat, breaking it up with a fork, for 8 to 10 minutes, or until no longer pink. Add the tomatoes, tomato paste, 2 tablespoons of the parsley, the basil, 1 1/2 teaspoons of the salt, and 1/2 teaspoon pepper. Simmer, uncovered, over medium-low heat, for 15 to 20 minutes, until thickened.

Meanwhile, fill a large bowl with the hottest tap water. Add the noodles and allow them to sit in the water for 20 minutes. Drain. (I skip this step; I don't cook my noodles)

In a medium bowl, combine the ricotta, goat cheese, 1 cup of Parmesan, the egg, the remaining 2 tablespoons of parsley, remaining 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside.

Ladle 1/3 of the sauce into a 9 by 13 by 2-inch rectangular baking dish, spreading the sauce over the bottom of the dish. Then add the layers as follows: half the pasta, half the mozzarella, half the ricotta, and one 1/3 of the sauce. Add the rest of the pasta, mozzarella, ricotta, and finally, sauce. Sprinkle with 1/4 cup of Parmesan. Bake for 30 minutes, until the sauce is bubbling.

Get your flu shot...because I didn't.

I don't have recipes I just sort of throw stuff in. This is my most used pan.

Chicken rice casserole

Shepards pie

Spicey cubed sweet potatoes.

Angel food cake mix with can crushed pineapple

Great recipes and thanks! I think we will be using these a lot more when the weather gets cooler--so these are just in time (I HOPE!).
