Creamy Italian Chicken & Orzo Skillet

Prep time: 15 min. Total time: 24 min. Makes: 4 servings, 1 1/4 cups each

1 lb. boneless skinless chicken breasts, cut into bite size pieces

1 small zucchini, chopped (or, substitute 2 cups frozen cut green beans)

1 tub (10 oz) Philadelphia Italian Cheese & Herb Cooking Creme

1/2 cup chopped tomatoes

2 cups hot cooked orzo pasta

Cook chicken and zucchini in large nonstick skillet on medium heat 6-7 minutes or until chicken is done.

Add cooking creme and tomatoes; cook and stir 2 minutes.

Serve over pasta.

This is a quick tasty meal that I have used a few times. It also uses up some of the plentiful zucchini at this time of year. I personally have not tried the green bean substitution. Hope you enjoy it.

That sounds tasty. I often use 4 oz. of mascarpone to add creaminess to pasta dishes. I buy the 16 oz. tub, separate it into four portions and freeze the portions in tiny individual glass containers.

I've never tried that cooking creme, I've wondered if it was tasty or not. I LOVE orzo so I'm going to print this and try it. Thank you!

Need help!!

I as going to try this recipe today..When I went to store {3} to buy

the Philadelphia Italian Cheese & Herb Cooking Crème I could not

find it in any of the stores. So when I got home I called their 800

number and was told they discontinued it. How sad as I was looking

forward in making this.

Does anyone have any thoughts on what could be substituted for that

product?

Any help would be appreciated.

I can't find it anymore either, boo! Look at post #1 above re: mascarpone (maybe add some Italian seasoning to that? I haven't tried it yet, but was planning to next time I make it. Maybe someone else will have a suggestion.

I would add Italian seasoning and grated Parmesan cheese to cream cheese or even whipped cream cheese (or mascarpone).

I made this on Monday night - used a can of diced tomatoes with garlic and Italian seasonings and mascarpone - it was awesome! Had the leftovers last night - went to feed the cats figuring I'd wrap up the portion that was left to have for lunch today but by the time I got back, DH had gobbled it up. Darn. I just wish he'd gain weight from eating so much, but he never does.

that is a great idea!......or even a packet of good seasons italian dressing mix or the garlic and herb dressing mix.
