Back on April 6 it was Caramel Popcorn day, I finally found my recipe I used at school.

I have so many recipes here and there. My Mom had a copy!!!

Caramel Popcorn

8 cups popped corn

3/4 c brown sugar

6 T margarine or butter

3 T corn syrup

1/4 t salt

1/4 t baking soda

1/4 t vanilla

Cook the brown sugar,margarine,and corn syrup, til it boils for 5 minutes. Stir in the salt, baking soda and vanilla. Pour over the popcorn. Place the coated popcorn on a baking sheet pan and bake for 25 minutes at 300*. Keep an eye on it as all ovens vary.

I remember you need a large kettle for the brown sugar mixture, doesn't it "blow up" in volume with the baking soda??

Haven't made this in years.
