Hi! I marinated some pork chops that I had just opened, on Wednesday morning. We ended up not being home - and now, I want to grill them Friday evening. Is that too long to be in the fridge, marinating??? That's 3 days. :( I guess I could freeze them right now, and set them in the fridge Friday morning?

Thanks! I too think they'll be fine, but I just didn't plan on them in there that long. I just mixed water, soy sauce, oil, freshly pressed garlic, and jerk seasoning.
Jen: Those chops should be just fine this evening. Most marinades have some acid, which retards the growth of bad stuff. I've seen lots of recipes that say to marinate (in the fridge, of course) for two days. The worst thing that might happen is the texture might get a little mushy.
