I'm doing low carb right now, so no beans. Here is the recipe I make, we are eating this for lunch today:
NO-Bean Chili
1 pound of ground beef, browned
1 chopped up onion, cooked with the meat.
14.5 can petite diced tomatoes
14.5 can tomato sauce
10 oz can Rotel Tomatoes
salt, pepper, garlic powder, cumin, chili powder to taste.
water to thin it out ( I use 4 cups)
Just combine all and let simmer a while.

No beans! or on the side if you must! and 1/4 inch cubes of tri tip- no ground beef- My Dad was from Texas and very strict about his chili...

Your recipe sounds good Barbarainnc, perfect for a cold day. I like my chili with or without beans, I'm not caught up on the chili-purist theory, just like whatever tastes good.

I make my chili just almost exactly like you posted. I grew up with mom adding Ranch Style Beans (a brand of can beans) I realized that she was using the beans as a filler- extend the meat- but I continue to add beans.
When I get gift chocolates I put the dark ones in the freezer so that I can add a square or two to the chili. One time I did not have any Ro-Tel tomatoes so I used just a can of chopped tomatoes with a can of green chilies or you can even substitute salsa or picante if you cannot find Ro-Tel.
There is a product called Chile Blend that has Chili powder, cumin, garlic, salt, paprika.

I've heard of chocolate in chili, but have never made it or had it this way.
We've eaten our chili, but next time I'll put some dark choc. in mine.

As long as they don't leave out the meat. With or without beans is just fine with me. The more meat, the better, though.

Very easy recipe, O/P! Thanks. I copied it, and will probably crock-pot it on high tomorrow morning. (I never start out or leave any meat on low, so I pour boiling water into the crock-pot, add whatever meat, and start it out on High.) (I don't like the idea of lukewarm meat sitting there. But that's just me....lol.)

I make chili every week. Mine has to have beans. I like to use smoked turkey wings instead of ground beef.
Tomorrow, I'm making a chili with ground turkey.
