I have never had good luck making meatloaf. I have 2 pounds of ground beef in the refrigerator and I don't know what to do with it. Help!

This is our favorite meat loaf recipe:

Meat Loaf

1 egg

3/4 cup milk

2 Tablespoons Worcestershire sauce

2 Tablespoons ketchup

1 teaspoon salt

1/4 cup finely chopped onion

2 slices of bread, torn into small pieces

1 1/2 pounds lean ground beef

Mix all ingredients together thoroughly. Pack lightly into 9x5x3-inch loaf pan. Bake in a 350 degree oven about 1 hour until done and brown on top.

Here's our favorite:

2 lbs. ground beef
1 c. Italian seasoned bread crumbs
1 onion , chopped
2-3 cloves garlic, minced
2 eggs, beaten
1/2-1 tsp. salt
1/8 tsp. pepper
Mix and bake at 375 degrees for one hour.

This is almost exactly like I make mine! No fillers and it comes out great every time!

Personally, I like my meatloaf. My recipe is:

1 1/2 lbs. hamburg (I used 90% lean)

1 1/4 cups bread crumbs

1 cup milk

1 egg

1 packet Lipton Beefy Onion soup mix

1 1/2 T. Worcestershire sauce

Dashes of salt, pepper, garlic powder, and celery salt

Bake covered at 350 degees for 1 1/2 hours.

If I am in a hurry, I throw in some thick salsa, smush it up, throw it in a loaf pan, pour some ketchup on top, stick it in the oven and go watch tv. It has salsa, tomatoes, peppers, onions and spices, which is what I put in meatloaf anyway. I don't use filler and egg usually anyway, so this works for me.

Recipe I have used for years and always a hit.....think it is the sauce!

MOTHER'S MEAT LOAF

1 1/2 lbs. lean ground beef

2/3 cup breadcrumbs

1/3 cup chopped onion

1 teaspoon salt

1/8 teaspoon pepper

2 eggs, lightly beaten

1 cup milk

Sauce (below)

Combine ground beef, breadcrumbs, chopped onion, salt, pepper, beaten eggs and milk in a large bowl; stir well. Shape meat mixture into loaf (rectangular shape) in a 13 x 9" baking pan. Bake at 350 for 1 hour and 15 minutes.

Remove meat loaf from oven, and pour the Sauce over top of loaf. Return meat loaf to oven, and bake an additional 15 minutes. Transfer to serving platter and enjoy!

SAUCE: Mix together well......

3/4 cup firmly packed brown sugar

3/4 cup ketchup

1 1/2 teaspoons dry mustard

3/4 teaspoon Worcestershire sauce
