Anyone have a good pumpkin chili recipe? Mine is bland and doesn't bring out the pumpkin flavor. Thanks in advance.

this is from Trader Joe's Smiley Happy

Fall Turkey Chili With Pumpkin

1 Tbsp TJ’s Olive Oil

  • 1/2 TJ’s White Onion, diced
  • 1 clove TJ’s Garlic, diced
  • 1 pkg (1.5 lbs) TJ’s All-Natural Ground Turkey
  • 1 can TJ’s Organic Diced & No Salt Added Tomatoes
  • 2 cans TJ’s Organic Pumpkin
  • 1 can TJ’s Organic Kidney Beans, drained
  • 1/2 can TJ’s Whole Kernel Corn, drained
  • 1 TJ’s Bell Pepper (Orange or Red)
  • 2 tsp TJ’s Sea Salt
  • 1 tsp TJ’s Cumin (to taste)
  • 1 tsp TJ’s Black Pepper (to taste)
  • 1 tsp TJ’s Cayenne Pepper (to taste)
  • 1 cup TJ’s Sour Cream (as garnish)
  • 1/2 cup TJ’s Shredded Cheddar Cheese (as garnish)
  • 1 package TJ’s Organic Cilantro (as garnish)

In a large skillet, sauté onions, garlic, and bell peppers in olive oil until onions are translucent and fragrant, about 3-4 minutes. Add in ground turkey and continue sautéing until turkey is browned. Drain excess oil, then transfer mixture to a large (4 quart or more) sauce pan. Stir in tomatoes, pumpkin, beans, corn, bell pepper and spices. Bring to a boil, stirring regularly. Once boiling, reduce heat and simmer for 20-30 minutes, stirring occasionally. Serve with sour cream, cheese, and cilantro as garnish.

We love this Turkey Pumpkin Chili recipe from Whole Foods.

You can play around with this basic recipe, depending on how spicy you like your chili and what type of beans you prefer. We like black beans. I often bump up the chili powder. And I like to use chicken broth rather than water. For thicker chili, use less water or broth. Equally good made with lean ground beef instead of turkey.
