I bought an apple cinnamon loaf cake at Wegmans....it was very tasty - very apple flavored.

The next time I was there I asked a baker about it. He said they use apple cider in place of the water they usually use in their loaf cakes.

I went home & experimented. I reduced the sugar in half in a simple coffee cake recipe and used apple cider in place of water....and diced and grated apples (a combination) in the cake.

It turned out fantastic and was a simple substitution.

Wow, great idea and so simple. Thanks, Terrier! That concept, of replacing the water with something flavorful and appropriate to the recipe, is useful for many things savory or sweet.

I do find that most recipes with sugar in them have at least 25-30% too much sugar and I always cut back.

I also find that recipes with cinnamon in them usually don't have enough so I bump that up.

I always cut down on the sugar and bump up the spices...I used Penzey's Apple Pie Spice in this cake!

I forgot to mention - the baker said they also used peach nectar in the peach loaf!

King Arthur has been selling boiled cider for years...It can be used in all kinds of things, but I love to put it in mashed sweet potatoes or butternut squash. Poodlepet

I have that too...I put it in apple pies to add some concentrated apple flavor.

I once substituted grapefruit juice for OJ in a recipe, and it came out terrible. I just wanted to warn anyone else before they do the same thing as me Smile

I should have known that there was no such thing as a "grapefruit cake", duh.
