This Zucchini Bread is really good. Just made some last weekend.
Zucchini Bread
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts
Grease and flour two 9 x 5 pans. Preheat oven to 325°
Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
Beat eggs, oil, vanilla, and sugar together in a large bowl.
Add sifted ingredients to the creamed mixture, and beat well.
Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean.
Cool in pan on rack for 20 minutes. Remove bread from pan & completely cool.
DH used 5 pans 6 x 3 1/2 x 2 small tinfoil loaf pans. Cooked for 50 mins.
Brittany's Chocolate Zucchini Cake is also yummy.
3 c shredded zucchini
1 c oil
1 3/4 c Sugar
1 tsp. salt
2 tsp. baking powder
1 1/2 tsp. baking soda
2 c flour
4 tbsp. cocoa
2 eggs
1 tsp. vanilla
chocolate chips about 1 cup
Mix all wet ingredients together till blended well.
Mix together dry and add to wet ingredients.
Sprinkle chocolate chips on top. bake at 350° 35-45 min. 13 x 9 pan
I like to add chocolate frosting or make it plain or and sprinkle with powder sugar......very good...
I used this glaze when I made it.
Easy Chocolate Glaze
1/2 cup chocolate pieces, semisweet
2 tbsp. butter or margarine
1 cup powdered sugar
2 1/2-3 tbsp. milk
In small saucepan, melt chocolate with butter. Remove from heat and beat in powdered sugar adding milk gradually until mixture is a pourable consistency

I love zucchini and just purchased some lovely ones at the farmer's market. I normally just slice and saute them in some olive oil with S&P but tonight I think I might do some on the BBQ grill along with some ribs. I like to put some zucchini in my salad as well, or just slice it up and dip it in some ranch dressing to nibble on. Great veggie!
