Pineapple/Pecan Cheeseball
2 - 8oz cream cheese
8 oz Crushed Pineapple, drained
1/2 c green bell pepper, chopped
1 small onion, chopped
1 c pecans, chopped
Combine all ingredients except pecans. Form into a ball and refrigerate until
firm. Roll in pecans.

This is my go-to cheeseball!
1 block of cream cheese (8 ounces)
1 cup shredded cheddar cheese
1 large can of Underwood deviled ham
Thoroughly combine all ingredients. Shape into a ball (or log if you prefer), and roll in chopped walnuts or pecans. Refrigerate at least 8 hours so the flavors can combine.
I know most people us pecans, but I love walnuts on this one!

2 8oz Cream Cheese
3-4 Bunches little gree onions (cleaned and sliced thin keeping white part and green parts separated.
1 16oz package boiled ham lunch meat or sliced thin from deli.( diced fairly small)
Cream everything together except the green parts of onions. Once mixed well turn out onto a large sheet of plastic wrap that you have placed the green parts of onions on. Pat the onions all over cheese ball then wrap with plastic wrap and chill over night. Many people think this is crab meat rather than ham. I love it with regular or garlic Ritz Crackers.

Happy National Cheese Ball Day. I have one savory and one sweet, both are favorites.
Ham & Cheese Ball
2 (8 ounce) packages cream cheese, softened
Lean ham, thinly sliced
1 bunch green onion
1 -2 tablespoon Worcestershire sauce
1/2 teaspoon garlic powder
VARIATION: Add some diced green chiles.
Slice ham into 1/2" strips, slice each strip into small squares. Separate the squares. Set aside.
Slice the bunch of green onions into very thin rings. In a large bowl, add the Worcestershire sauce, garlic powder, green onions (add all or just enough for your preference), to the softened cream cheese. Mix together well until ingredients are equally distributed.
Using a large piece of plastic wrap, shape the cream cheese mixture into a ball. Roll the ball in the ham pieces (faster) or manually press the ham squares into the cheese ball (prettier). Place on a plate and wrap in plastic wrap. Allow to chill for a few hours or overnight before serving. Serve with crackers, vegetables or crusty bread.
Chocolate Chip Cheese Ball
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
1/4 teaspoon vanilla extract
3/4 cup confectioners' sugar
2 tablespoons brown sugar
3/4 cup miniature semisweet chocolate chips
3/4 cup finely chopped pecans or walnuts (I always toast them)
Graham crackers (We like Regular and Cinnamon, other flavors are good too and use Squares, Sticks and Teddy Grahams.
In a large bowl, beat the cream cheese, butter and vanilla until fluffy. Gradually add sugars; beat just until combined. Stir in chocolate chips. Cover and refrigerate for 2 hours. Place cream cheese mixture on a large piece of plastic wrap; shape into a ball. Refrigerate for at least 1 hour. Just before serving, roll cheese ball in pecans. Serve with graham crackers. Yield: 1 cheese ball (about 2 cups).
