Side Dishes for a Low Carb Diet

My husband is doing really doing great on a low carb diet, but he is getting tired of salads and he doesn't really care for veggies. I am out of ideas for a side dish. Any ideas?

perhaps a lower-glycemic index fruit like raspberries or blackberries? I mainly eat low glycemic index fruits and veggies and greek yogurt and lean protein. I love veggies so I get more than an abundance of them in my diet. I guess fruit would be an option for him.

Mashed cauliflower as a substitute for mashed potatoes! I love them!

Separate florets from the head, cook until well done as you would white potatoes. Drain and add butter, garlic, warm milk, sour cream, cream cheese, etc and mash!

Make sure you drain well. Cauliflower can get waterlogged.

Agree with puppy - mashed cauliflower - I also put the cooked cauliflower through a ricer to get a nice mashed potato consistency.

Also try roasted cauliflower and/or broccoli -for a different taste.

Other ideas: Mushrooms, cole slaw, spaghetti squash - made into a faux mac and cheese, zucchini noodles with the sauce of your choice.

Have you tried roasting veggies? They taste so different roasted. Adding cheese is also a great way to disguise the taste. Worth a try. It worked for my kids. Pinterest has some interesting ways to roast and finish veggies.

Deviled eggs, cottage cheese or 3 bean salad perhaps.

dreamfields pasta with pesto or alfredo sauce

Turnip chili fries are one of my favs, turnip evoo chili powder , roast till crispy. Good stuff. I second the dreamfields pasta.

I was thinking about getting one of the Vegetti things
