Problem chopping veggies in the vitamix?

Hi guys. Just got my Vitamix. Love making smoothies, but have a question. I made a stirfry yesterday and tried to chop the veggies in the Vitamix. When I just put them in and pulsed they got stuck to the bottom and the top ones didn't move at all. When I tried the water trick they turned to mush. How do you guys chop broccoli, onions, tomatoes, without creating mush? Thanks. Hoping to use this a lot to justify the price to hubby.

I don't have a vitamix but I stir fry a lot. I would never put my veggies in a blender for stir fry. I won't even use my food processor. I chop them by hand or use a mandolin slicer. I don't want baby food. ;)

Agreed. I own and use a Vitamix, but for stirfry you need to have consistently size pieces. Not a job for the Vitamix.

I never chop vegetables in a Vitamix unless I am using them for recipes where uneven pieces do not matter. Ninjas are vastly superior with this task and the Genius slicers/dicers are my go to for evenly sized pieces and at the top of my ranking.

In spite of what they tell you, the VM does not chop veggies as well as a knife or FP!

There is no replacement for sharp knives to chop and nicely cut up vegetables. Enjoy!

I'm with Skylands on that. Unless I were cooking for 100 people, and even in consideration of my arthritis problems, I'd use knives. Best way to go. :) Food processor should also work well, if you have the right disks. But really if you are not cooking ginormous quantities, by the time you pull out an appliance or gadget, get it together, do the job, clean all the parts - you could have chopped them with a knife, made your recipe, washed,dried, and put away the knife, and are sitting down to dinner. :)

Furthermore, why would one consider using a blender to chop vegetables? Did they use that as part of their Vitamix presentation? If so, I'd have to say - file that under 'they will say ANYTHING to sell something'. Nothing wrong with Vitamix, of course, I love mine, but I wouldn't use a blender to chop veg.

I wouldn't use my Vitsmix to chop veggies unless it was meant to be really fine or something.

Jan M. used it for a cole slaw demo. ( No suggestion for using Vitamix for stir-fry vegetables.) He did use water in the demo and then drained it in a colander when finished. Then he made the cole slaw dressing in the Vitamix.

It does not cut up vegetables well. I have had a vita mix for over 25 years ( I have the original stainless steel version...) You will burn up your motor trying to cut up chunks of vegetables. It only works if liquid is there to make a slurry.

If you notice on the shows demonstating it- they make soup- ice cream etc.... I have never seen them do dry vegetables.

When you want pretty veggies all the same size, the genius nicer dicer is perfect, easy,quick and neat.

If you need veggies for a meatloaf, sauce, seasoning,pot roast etc, the Vixamix on pulse will do the job super quick but if you don't want mush you have to put in small amounts at a time.

Your story is one of the reasons, I cannot justify the price as awesome as the machine is, it still does not go in the dishwasher, a major must on my list{#emotions_dlg.laugh}, if I am chopping raw meat, then going to a fresh veggie drink, I want it sterilized.

The smoothies are so healthy and they really do look smooth when they pour them on the plate. The soups look great so maybe hubby will understand.

Hmmm...I own a Vitamix (which I completely love) and I only use it to make smoothies, shakes or soups. It is way too powerful to slice, chop or cut strips or chunks. It pulverizes food and seeds. I think you would be better off using either a food processor or chopper.

had my original vitamix over 20 years and never used it for chopping even though i could have added water and used it for cole slaw, but i really do not like the idea of wet cole slaw.

i also have a cusinart and kitchenaid food processor, but use this instead for all my chopping tasks.

tree6199, thinking a bit further since I have made coleslaw similar to Long John Silver's for 20+ years and never had "mush", I would say you have not perfected this technique so I will describe how I wet chop..

I put the produce (cabbage, carrots, onions, green peppers, red peppers) cut into about 2" pieces (not even evenly ) in the container and then fill the container until the produce at the bottom just floats off of the blade. I then secure the lid and with the machine off, flip the left button to high and then turn the machine on and then off for about 1/2 second. At this point you can see how the pieces are chopped and if you would like them smaller then turn the machine on and off for another 1/2 second or less. Typically that is all I need but if a third time I literally will flick the power on and then off. I then empty the container ito a large colander and let it drain for a short time and if necessary (because I am in a hurry) I will press the produce against the sides of the colander to speed up the draining.

I also use this wet chopping technique when I am making potato/onion latkes.

If I feel lazy and am making meatloaf or another similar dish and do not care how even the chop is, I will turn the speed up to 2 or 3 and then drop 2" pieces of produce into the spinning blades. Softer produce I use a speed closer to 2 and harder usually 3 or 4...

I use mine to chop onions and carrots all the time. I turn the machine on a lower speed, and drop pieces of onions/carrots onto the blade. I do not add any water. It works great.

I know of nothing faster when making chopped coleslaw than wet chopping as I described. Doing as you suggest would simply not be suitable for the volume of cabbage, onions, carrots, fresh peppers.. to make large volumes that I need
