This has been posted before, but some might have missed it. I thought it would be great to hear if you follow this recipe exactly, or if you have found any delicious variations. I thought I should start by listing Jorge's recipe. Jorge’s Skinny Muffin As seen on Dr. Oz show 1/4 cup ground flax 1 tsp baking powder 2 tsp cinnamon 1 tsp coconut oil 1 egg 1 packet stevia (or Truvia) Mix all ingredients together in a large mug and microwave for 50 seconds. Allow to cool to a safe temperature and enjoy! (my microwave takes longer than 50 seconds, I cook for 1 minute and 10 seconds)

I have recently made this in my fiestaware jumbo cup which is about 18 oz. It puffs up and then falls down. Chocolate Minute Muffin 1 Tablespoon ground flax 1 Tablespoon almond meal (ground almonds) 1 Tablespoon cocoa ½ teaspoon baking powder 1 teaspoon stevia or truvia 1 egg 1 Tablespoon cream Mix well in 18 oz mug and microwave for 1 minute. A person could divide the batter into two mugs. (In my microwave I had to microwave for 1 minute and 10 seconds, or more) Thanks Oceantown. My microwave takes longer to cook than some other microwaves, and most similar recipes list a cooking time of 50 seconds to 1 minute. Rinse mugs or ramekins out right away so the crumbs do not dry on and make it hard to clean. Maybe you would enjoy the variation using 1/2 ground flax and 1/2 ground almonds. Maybe you could cook it a little longer? Was it kind of wet... (you mentioned slimy texture)? When I turn the muffin upside down on a plate, if it is still a little moist on the outside I put it back in the microwave (I leave it on the plate) for 10 seconds. If it needs more, I put in for another 10 seconds. Today I made the chocolate muffin and when I turned it out onto the plate it was too moist, and I ended up cooking it for an additional 20 seconds. Did you let it cool a little? I just can't imagine how your muffin turned out slimy. I put in a 5" or 6" round shallow bowl sprayed with a little Pam. Then microwave for 1 minute or until the top is set. This makes a small loaf and I slice off a little piece at a time. I recommend buying ground flaxseed, rather than trying to grind your own. http://www.bobsredmill.com/golden-flaxseed-meal.html http://www.flaxpremiumgold.com/24-oz-Organic-TCM-Golden-Omega-Pre-Ground-Flaxseed-8-80999-10816-7-ORGANIC.htm Bob's Red Mill is found in many grocery stores around here, maybe even health food stores. The Premium Gold brand is what I usually use, and I find a 3 lb package at Costco. TCM means 'true cold milled' and has a longer shelf life and does not even need refrigeration, although I store it in the refrigerator. The package in my refrigerator is dated, best by Feb 2013. 2 Tablespoons of Premium Gold brand ground flax is 4 grams carbs, 4 grams fiber, 3 grams protein and zero grams sugar. The package I buy at Costco has a gold colored package, rather than the blue colored package shown on the website. It is possible that some health food stores may sell ground flax seed in bulk. Regarding ground almonds: Bob's Red Mill also sells ground almonds (almond meal), but I make my own. http://www.bobsredmill.com/almond-meal-flour.html I read that you can use UNblanched almonds (with the skins on) and chop them until fine. I bought sliced natural almonds. I put them in my small food chopper and pulsed on and off until very finely chopped. Then I put into a sieve and shook into a bowl. The larger pieces I put back into the chopper and chopped until fine. I did not want to make almond butter, lol! After a few times I had a small amount of ground almond pieces that were a little too large to fit through the holes of the sieve, and I just added those to the ground almonds and did not worry about it. I made about 2 cups and store in the refrigerator. There is a lot of info out about the health benefits of coconut oil. This is actually solid at room temp. I have not bought coconut oil yet, but I would really like to try it. Truvia is a zero calorie, zero sugar gram, natural sweetener. It is not zero carbs. 1 packet of truvia is 3 grams carbs. I recently bought Safeway Brand Stevia. It has the same ingredient list as truvia, erythritol, rebiana, natural flavors. I did not know this until I took a close look at the box, but the safeway brand lists 1 packet as zero grams carbs. That does not really make sense to me. I just noticed another difference. 1 packet of truvia is 3.5 grams, and 1 packet of safeway stevia is 2 grams. I do not have any truvia in the house, or I would measure the amount in one packet. I thought that the truvia packet seemed like there was more in there, and I guess I was right. I have also used sweetleaf brand stevia packets. That seemed sooo much for one muffin. I buy Rumford Aluminum-Free Baking Powder and use 1/2 teaspoon for one muffin. I do want to try to use 1/4 teaspoon and see how it turns out. You are absolutely right, it is eating better, and the weight will come off! So many times people want to go on a diet to lose weight, but then they either give up, or they reach their goal and go back to old ways. (and gain back) It really works to learn how to eat for a lifetime. I agree with you, reducing the sugar makes such a difference. Hi, violann, I have not tried chia seed, although I have read that it is a healthy food. After doing a search I found out that ground chia seeds are available. Another idea might be to add 1/2 teaspoon or so of whole chia seeds to one of the muffins. Thanks for the post!
