UH OH--My Corned Beef didn't come with that seasoning packet!! Help!!!

It's already boiling--so--Anyone have a clue as to what's in that little packet?? I looked online, found an EZ recipe, and it says, "add the packet of seasonings that comes in the corned beef package", well, mine doesn't have one!!! It's the standard brand Freidrich (Or something like that) brand.  I don't want to add salt, if the thing is salted! (don't want to kill my DH & son--I don't like corned beef, so I'm safe) I figure I'm good with pepper, but beyond that--don't know! Please help this poor Polish girl pull off! a successful St. Patty's day dinner!! Thanks!

Dont worry!---It has been brined and seasoned already!---It will be fine! sometimes I forget. I think there are mustard seeds, pepper corns and bay leaf---but you wont miss it! Enjoy!

I'm pretty sure it's basically pickling spices.

I made mine yesterday so I don't have the ingredient list, maybe someone else can look for you.

For right now, if I were you, I'd toss in about 5 whole peppercorns.

OK ...relax. Add 10 black peppercons, 2 cloves of garlic, 2 whole cloves and 2 bay leaves to the water as it is boiling. Cook for 3-4 hrs. About an hour before the meat is done, add the carrots and peeled potatoes. (some pple add onions, but I don't like them in mine). About 15 minutes before the vegies are done, cut the cabbage in quarters and add to the pot. Cook until the cabbage is done.  Do you want my recipe for a mustard sauce to serve with the corned beef? I'll be happy to provide.

From Yankee magazine:

Note: Corned beef is usually sold with a ready-made spice packet. If the packet is missing, add 1 teaspoon whole black peppercorns, 1/2 teaspoon mustard seeds, 1/4 teaspoon celery seeds, 1 bay leaf, and a pinch of dried crushed red pepper to the cooking liquid.

Jeanhelen....you probably bought the grey corned beef, which doesn't come with a packet, but in my opinion is the best. Follow the recipe I gave above and it will come out delish!! Let me know if you want the recipe for the mustard sauce, too and I'll dig it out.

Numerous other food sites suggest going to the store and getting a small container of pickling spice.  Toss a couple of teaspoons into the water with the corned beef.

I'm sure it's fine to toss in what you have the spices suggested above.

 Here you go, hennny....and anybody else who's interested:

Mustard Sauce

2 Tablespoons Butter

1 1/2 Tablespoons flour

1/2 teaspoon salt

1/8 teaspoon pepper

1 cup milk

1/4 cup prepared mustard (I use poupon)

1 Tablespoon sugar

1 Tablespoon cider vinegar

1 teaspoon Worcesteshire sauce

Melt butter in small saucepan; remove from heat. Stir in flour, salt and pepper until smooth. Stir in milk. Bring to boiling over med. heat. Gradually stir in mustard, sugar, vinegar and Worcestershire. Reduce heat and simmer , stirring for a couple of minutes. Serve warm.Makes about 1/14 cup.

This is absolutely delicious over the corned beef and makes the dish in my opinion. Don't forget either Red wine vinegar or balsamic vinegar to dabble over the cabbage. Yum.

Hey Pillowpance--I didn't want to have to trek out to the store to get more ingredients (I have been gone all day) but I am happy to report I have all the ingredients for your sauce on hand so I will give it a try!!!! Now, remember, I'm having grilled chicken, so I won't have your recipe, but my hubby will be wondering how I got to be so gourmet!! Thanks!!! And thanks to everyone! I don't have all the other ingredients mentioned--but I have some stuff (like red pepper--and I might have some pickling stuff) My corned beef was a bit more expensive than the really low priced one, but I chose it 'cause it didn't have as much fat--DH has high cholesterol (just doin my part!!!)
