Does anyone remember a recipe from the 1980s for rigatoni using Velveeta and spaghetti sauce? My girlfriend and I used to make it for our family get-togethers all the time and now I can't find my recipe and can't seem to duplicate it from memory. If you have it, please share! thnx

Hi memom..I don't know if this is close..but this is the recipe I use. Hope it helps.

VELEVEETA CASSEROLE

1 lb. rigatoni
1 lb. ground beef
1 lb. Velveeta cheese
1 sm. green pepper
1/2 small onion..minced
1/2 tsp. salt
Dash of pepper and oregano
1 sm. can tomato paste
1 sm. can tomato sauce
2 cans water
1 sm. can mushrooms
1 tsp. sugar

Boil rigatoni according to directions. Brown green pepper and onion in a small amount of vegetable oil or butter in a small fry pan. Add mushrooms and continue cooking for approximately 1 minute.
In a separate pan, cook ground beef. Drain. Season with salt, pepper, and oregano to taste. Add tomato paste, tomato sauce and 2 cans water. Cook over medium heat. Sprinkle with sugar to taste. Add green pepper, onion and mushrooms to this mixture. Stir constantly til mixture begins to boil.

In a casserole bowl, put a layer of rigatoni, topped with a layer of the meat mixture and then a layer of velveeta Velveeta cheese. Makes 2 layers. Cook in 350 degree oven for 20 to 25 minutes.

Chuckr..Hi my friend. Nice to see you! You are good! That's exactly right..the cheese is diced in small cubes. I went to edit the recipe..but the edit button isn't there! Thanks for the question. You are more than welcome for the post.
