How to store bread to prevent mold?

Does anyone have any tips/hints for preventing moldy bread (other than storing in the fridge)?  any bread boxes that are good for this?  We live South Fla and I end up feeding the ducks a lot of bread!!  Thanks!

I got a Lock & Lock bread container.  It seems to work.  Of course, you have to get used to getting the container out, opening it, and then putting it back.  lol!  Takes a few extras steps, but it's worth it.

I, too, use Lock & Lock.  It will keep bread fresh for me for at least two and a half weeks.  I also am careful to keep it in a cool, dry place...not near the stove or the windows, etc.  I keep it in a bottom counter on the opposite side of my kitchen from the stoves or windows.

Please know that I am super picky about bread and before I had Lock & Lock I would toss it after two days, so it says a lot that I will eat it 18 days later when it is stored in L&L.

I guess putting it in the refrigerator or freezer will extend its life but the problem with that is that it imparts a terribly unpleasant taste to the bread.

Freezer, & very carefully wrapped so it won't dry out.  Lock & Lock's good for this.  Sliced bread doesn't take long to thaw, even if you didn't plan ahead.

 I'm particular about bread too.  I don't like it when it's been in the frige or freezer.  I just searched for Lock & Lock on the Q, and there is a set of different size bread containers.  It looks nice.  It wasn't available when I got my bread container.

In the fridge in a lock n lock container...I do that with muffins too.

Our bread is kept in the freezer till we need it, then kept in the refrigerator once the package is opened.  No mold.

Hi Sofla!

I keep my bread in a Tupperware container that I don't even know if they sell anymore. It is the perfect size for your average loaf! And my bread stays mold-free forever! (Well, a good long time!)

Thanks everyone!  I think I will have to investigate the Lock & Lock (to add to my existing L&L collection Cool  (and Hi NoTan!!  I'm the insomnia queen for whatever reason now, so I'm using my time wisely!!{#emotions_dlg.rolleyes}

Try Bed, Bath & Beyond - they have OXO Good Grips airtight containers that I use and if you have one of their coupons it's not expensive.

 Good question Robin, I too have wondered about this since I got my bread container. Right now I keep it in the bag but didn't know which way to do it.

 Hi JPC... I also have one and never knew if I am suppose to leave it in the bag.  I haven't used it in a long time, maye I will get it back out.

Refrigerate for one week, or freeze whole loaf, taking out just a few slices as needed-toast or leave out until bread is temperature you prefer.  Bread freezes well in original package.  I live in Florida-the mold and humidity capital.  I also make homemade bread and freeze extra loves--well wrapped in foil with plastic bag.

We don't go thru a lot of bread so I wrap up 4 slices of bread per bundle (saran wrap then baggie) and do that for the whole loaf and then freeze in the origianl bread wrapper. I take out a bundle as needed. I read somewhere that you should not thaw the bread in the fridge. I keep the 4 slices in a lock and lock. I have not had any problems.

"Staling is inevitable over time. In a process known as retrogradation, starch molecules reorganize to form crystalline structures in the presence of the moisture within the baked goods themselves. This eventually leads to a hard, dry texture at room temperature — no matter how well wrapped the item was during storage.

The cooler temperature of the refrigerator speeds up this process, but the freezer actually halts it. The water molecules in the cake or bread freeze, which immobilizes the starch molecules and prevents them from forming the crystalline structures that translate to stale texture."

I, too, like some of the other posters do not like bread once it has been refrigerated or frozen.

I make a lot of my own bread, and bought the lock and lock bread keeper, but I have had bread mold in that, also. One other poster said she used a darning needle (I'm pretty sure that's what she said) and put two or three holes in the ends of her lock and lock to keep the bread from molding.

I just bought on Amazon dot com an adjustable bread keeper. It lets you determine the amount of air you let into the container so that there is a little air circulation so the bread does not "gas" and mold. I've used it for about two weeks now, and each loaf of bread I have put in the container did not mold. I set the adjustable dial to let two holes open on each end of the dial.

Good luck. If you find something that works wonderfully, please share. This is a real problem for those of us who think refrigeration and freezing changes the taste and texture of bread.
