Sodium-free Soy Sauce Substitute and Teriyaki Sauce

I found these recipes because I am trying to cut down on the salt/sodium in my diet.

Sodium-free Soy Sauce

2 tbsp. Sodium-Free Beef Bouillon
2 tsp. red wine vinegar
1 tsp. molasses
1/8 tsp. ground ginger
dash of black pepper
dash of garlic powder
3/4 cup water

In a small saucepan, combine and boil gently, uncovered, about 5 minutes or until mixture is reduced to 1/2 cup.
Store in refrigerator.  Stir before serving.
Makes 1/2 cup.

Recipe comes from a Better Homes and Garden low sodium cookbook.
Make a double or triple batch.  It keeps well in refrigerator in an airtight container.


Sodium Free Teriyaki Sauce

1 cup soy sauce substitute (above)
2 tbsp. sesame oil
2 tbsp. saki (can substitute sherry or mirin (Japanese rice wine)
1/2 cup sugar
3 cloves garlic, crusted
2 slices ginger root (or 1/2 tsp. ground ginger)
dash of black pepper

Combine all ingredients in saucepan and heat until sugar is dissolved.
Store in airtight container in refrigerator.

Wow, Sue-P! I love these recipes, and it's just what I need. I think we consume much to much salt in our country, among other things.
