Low-Salt Easter Dinner suggestions

Hi ladies, I am posting to ask for suggestions for low-salt main course and side dishes for the Easter meal. My father is staying with me and recovering from major surgery with a pneumonia complication, and he has to steer clear of salt at this time.

I don't keep salt on the table, but he really loves ham, gravy, etc., which I will have to eliminate this holiday.

Any food suggestions or EASY recipes would be greatly appreciated. He loves eggs, so I think I'm going to make deviled eggs for him. I'm not a great cook, but I do get ideas from this forum.
