Pierogi recipe needed

I am needing a specific recipe for pierogies. I want a recipe that has been made and not a recipe just pulled from a website. The pierogies are made with sauerkraut, mushrooms and shredded pork. I do not know what type of pork to purchase. I can remember the pork had to be shredded and then added to the other ingredients. Thank you.

I have many Polish cookbooks and none of them have your described filling. I do have one for sauerkraut, mushroom, onion and egg. Your ingredients almost sound like Hunter's Stew and for that you usually use a piece of pork that has some fat in it, definitely not a loin. You probably don't have to be too exact with what type of pork you put in your recipe.

I can't help with the pierogi recipe, but I do know for pulled pork anything, usually a shoulder or Boston Butt is used for the pork portion. Whether you do it in a slow cooker, pressure cooker, on top of the stove or in the oven, be sure you cook it until it pulls apart easily. If you know how to make your basic pierogi, then tasting your filling ingredients will be your best bet. Good luck! P.S. Your butcher should be able to steer you to a good cut of meat for this as well. Ours always has wonderful suggestions and helpful tips when we're stuck.

Thank you for the reponses. My Polish grandmother who is from Chicago made these pierogies. I am an odd combination of 50% Polish and 50% Venezuelan. During the Holidays the Polish side of cooking wants to come out. My grandmother passed the recipe to my Mother and sadly while my precious Mother was alive --- I was not interested in learning how to make the pierogies. I do know how to prepare and make the dough.

Sorry, can't help with the pork ones. I do have 100% Polish background. I remember the sauerkraut, though I have never made them and the potato and cheese, which I do make. Yum,yum!!

I'm Polish and Ukrainian and never had a pierogi with meat in it.
