Cake with 'no icing' suggestions.

My hubby wants me to fix him a cake with 'no icing'. What kind of suggestions do you have? (You know, it has to be a bit more than just a yellow box cake mix){#emotions_dlg.lol}

I have a recipe for a Pistachio Chocolate Bundt Cake that I got off of a pistachio pudding mix that I like.

1 (18.5 oz) package yellow cake mix

1 (3.4 oz) package instant pistachio pudding mix

1 cup water

3/4 cup vegetable oil

4 eggs

3/4 cup chocolate syrup

Preheat oven to 350 degrees. Grease and flour a 10" bundt pan. In a large bowl, mix together the cake mix and pudding mix. Pour in the water, oil and eggs. Mix well with electric mixer. Pour half of the batter into the prepared pan. Mix the chocolate syrup into the remaining batter in the bowl. Pour the chocolate batter over the top of the batter in the pan. Do not stir but take a knife and cut through the two batters in the pan to swirl. Bake for 50 minutes or until a toothpick inserted into the center of the cake comes out clean. I sprinkle powdered sugar over the top but you can just leave it off.

I never ice cakes. I put jam/jelly and whipped cream in between two layers. Lemon curd is good, too.

Or roll up a shallow sheet pan chocolate cake with ganache filling.

I have a recipe for a one layer citrus cake made from scratch. It has a little powdered sugar sprinkled on top. However, I like to serve it with grapefruit curd sauce. It's too die for. Let me know if you want the recipes.

Also someone just gave me a recipe for Kahlua Cake, made in a bundt pan, Kaylua in the cake and kahlua sauce drizzled on top.

My favorite no icing cake is angel food. There are lots of good bundt cake recipes on sites like allrecipes.com. Usually they don't have icings or if they call for a glaze, I usually just dust with powdered sugar.

Blackberry Jam Cake


1/4 cup butter
1 cup white sugar
2 egg yolks
1 teaspoon baking soda
1 cup buttermilk
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon unsweetened cocoa powder
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1 cup blackberry preserves

Glaze (optional)
1 cup sifted confectioners’ sugar
2 tablespoons milk
1 tablespoon butter, softened
1/2 teaspoon vanilla extract

Combine flour, baking powder, salt, cocoa, cinnamon, and
allspice.

Dissolve soda in buttermilk, stirring well.

Cream butter and sugar, beating well. Add eggyolks, beating mixture well.

Mix flour mixture into the creamed mixture
alternately with the buttermilk mixture, beginning and ending with flour
mixture. Fold in blackberry jam. Pour batter into a greased and floured
10 inch bundt or cake pan.

Bake at 350* for 45 to 50 minutes, or until cake tests done. Cool in pan for 15 minutes. Remove from pan, and cool completely.

Optional Glaze:

Combine confectioners’ sugar, milk, butter and vanilla. Beat until mixture is smooth. Spoon over cooled cake

Fresh Pear Cake

4 cups peeled, cored and chopped pears
2 cups white sugar
3 cups sifted all-purpose flour
1 teaspoon salt
1 1/2 teaspoons baking soda
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
4 egg whites
2/3 cup canola oil
1 cup chopped pecans

Combine the pears and the sugar and let stand for one hour.

Preheat oven to 325* Spray a 10 inch bundt or cake pan with non-stick cooking spray.

Slightly beat the egg whites and combine them with the oil, chopped pecans and pear mixture.

Stir the flour, salt, baking soda, nutmeg, cinnamon and cloves.
Stir in the pear mixture. Pour batter into the prepared bundt pan.

Bake at 325* for 1 hour and 10 minutes.

Remove from oven and let cool on a wire rack for 10 minutes before
removing form pan.

I am sure you have already picked a cake from these great recipes share but just now saw your request. I have a recipe for butter pecan coffee cake that is to die for. It is so v very moist. Here is the recipe I use and get rave reviews on

BUTTER PECAN COFFEE CAKE By: JPC

Coffee Cake

1 - Box Butter Pecan Cake Mix

1 - Small Pkg Instant Cheesecake Pudding

4 - Eggs

1/2 - Cup Oil

1 - Cup Water

1/3 - Cup Sour Cream

Topping

1/3 - Cup Brown Sugar

1/4 - Cup White Sugar

1 - tsp Cinnamon

1/2 - Cup Chopped Pecans

Mix Coffee Cake ingredients well and put 1/2 of the batter into a 9 X 13 greased pan.

Sprinkle with 1/2 of the topping mix and cover with remaining batter and rest of topping.

Bake 35 minutes in 350 degree oven

Be sure to let us know which one you went with and how your lucky hubby like it.l

Store bought (or box) angel food cake, cut off top & save and cake hollowed out to be a shell

sliced strawberries (or another fruit) added whipped cream or cool whip

fill hollowed out angel food cake with whipped creme/fruit mixture & put top back on cake

I use to make a jello cake. You would bake the cake, then poke holes and pour the jello inside. You could put whip cream on each piece if you wanted. I'm sure there is a recipe for this on a website. So easy and really good.

I like to use a spice cake mix and cut the oil to about a tablespoon and cut the amount of water and add a can of pumpkin or applesauce.

Sorry, no real recipe just add the water last and add it until the mix looks right, LOL.

You can mix powdered sugar with a tablespoon of milk and some water to make a glaze to drizzle over or use a little whipped cream or Cool Whip.

ETA Katkitty's Pear Cake recipe sounds like it would be good using a spice cake mix and Mary Bailey's Angel Food suffed with fruit sounds wonderful in this hot weather

Sarah,

Does your husband like molasses? If so, a shoo-fly cake would be ideal. It has no icing; rather, it has a crumb topping. It's delicious with a cup of coffee.

RECIPE: SHOO-FLY CAKE

4 cups flour

½ tsp. salt

2 cups white sugar (may use less if desired)

1 cup Crisco (solid)

2 cups hot water (not boiling)

1 cup Brer Rabbit (or Grandma’s) molasses (mild flavored)

1 ½ tsp. baking soda

Mix flour, salt, sugar and Crisco with pastry blender. Save 1 cup crumbs for on top of cake. Add water, molasses and soda and mix well with electric mixer. Put in greased and floured 9 x 13” cake pan. Spread crumbs evenly on top of cake. Bake at 350 degrees for 45 minutes (or until tooth pick comes out clean). Enjoy!

This one is a winner.........you can mix ingredients in a bowl and put into pan as well....also.........serve ice cream with it........yum....could even top with a bit of chocolate fudge sauce.....

Fast Fixin' Chocolate Chip Cake

1 pkg. Devil's Food Cake Mix

1/4 cup oil

2 eggs

1 1/4 cups water

1 pkg. chocolate instant pudding (4 serving size)

1 cup chocolate chips (6 oz. pkg)

Preheat oven to 350. Pour oil into a 9 x13" pan. Tilt pan until bottom is coveredwith oil. Put remaining ingredients into pan; stir with a fork or spoon until blended (about 2 mins). Scrape sides and spread batter evenly in pan. Bake at 350 for 35-45 mins; until toothpick inserted near center comes out clean. Cooled cake may be sprinkled with powdered sugar.

Chocaroon Cake


2 egg whites
1 pinch salt
1/3 cup white sugar
2 tablespoons all-purpose flour
1 3/4 cups flaked coconut
1 (18.25 ounce) package chocolate cake mix
1 (3.9 ounce) package instant chocolate pudding mix
2 eggs
2 egg yolks
1 1/4 cups water
1/3 cup vegetable oil


Beat egg white with salt until foamy. Gradually add sugar, and
continue beating until mixture forms stiff shiny peaks. Blend in flour
and coconut.

Combine cake mix, instant pudding mix, eggs, yolks, water, and
oil in a large bowl. Blend, then beat with electric mixer on medium
speed for 2 minutes. Pour 1/3 of the batter into a greased and floured
Bundt pan. Spoon in coconut mixture, and top with remaining batter.

Bake at 350* for 50 to 55 minutes.
Remove to wire rack, and cool thoroughly.

1 & 1/2 C flour

1 C sugar

3/4 C cocoa

1 & 1/2 tsp baking powder

1 & 1/4 C buttermilk

1 C packed light brn sugar

2 lrg eggs, lightly beaten

1/4 C oil

1 tsp vanilla extract

1/2 C hot water

1/2 C prune puree

1/2 C bittersweet chocolate, (or choc chips)

350*

Grease & flour 12 C bundt pan

Toast nuts 5-7 min

Mix flour, sugar, cocoa, baking powder, soda, & salt

Add buttermilk, brn sugar, eggs, oil, & vanilla

Beat with electric mixer till smooth

Mix hot water and prune puree and whisk in

Fold in chocolate & nuts

Bake 45-55 min Cool 10 min then invert on plate

Dust with confectioners sugar

okay, here's another idea:

Butterscotch Rum Pound Cake

1 (11 ounce) package NESTLE® TOLL HOUSE® Butterscotch Flavored
Morsels, divided
1 (18.25 ounce) package moist yellow cake mix
4 large eggs
3/4 cup sour cream
1/2 cup milk
1/2 cup dark rum
1/4 cup butter or margarine
1 cup finely chopped walnuts

Glaze optional (recipe follows)
chopped nuts (optional)

PREHEAT oven to 350*. Grease 10-inch Bundt pan.
MICROWAVE 1 1/3 cups morsels in medium, microwave-safe bowl
1 minute; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Cool to room temperature.

COMBINE cake mix, eggs, sour cream, milk, rum, butter and melted
morsels in large mixer bowl. Beat on low speed just until moistened.
Beat on high speed for 2 minutes. Stir in 1 cup nuts. Pour into prepared
Bundt pan.

BAKE for 50 to 60 minutes or until wooden pick inserted in cake
comes out clean. Cool in pan on wire rack for 20 minutes. Invert onto
wire rack to cool completely; transfer to serving platter.

Serve with dollop of whipped cream and fresh sliced strawberries for garnish

Optional: Pour Glaze over cake; sprinkle with chopped nuts.

Glaze: MICROWAVE remaining morsels and 1 to 2 tablespoons milk in
small, microwave-safe bowl for 30 seconds; stir. Microwave at additional 10- to 20-second intervals, stirring until smooth. Cool for 5 to 10 minutes.

APPLE CAKE

1 1/3 cup flour

1 pouch baking powder

1 pinch of salt

1 1/3 cup sugar

2 pouches of vanilla sugar (1 to add to the dough, the other to sprinkle over the cake)

1 cup of oil (I use canola oil)

4 eggs

3 large apples

9" X 13" baking dish

Coat the baking dish with butter and flour. Slice the apples.

In a bowl, mix together flour, baking powder, salt, sugar and vanilla sugar. Add the oil and the eggs one by one until the mixture is smooth. Pour the dough into baking dish and cover with the sliced apples.

Bake in a preheated 350 degrees oven for 45 minutes. (Around the 35 minutes mark, I start checking with a toothpick).

Here's a simple chocolate cake that needs no icing and the 8" square one layer size makes it perfect for just hubby and me. The top forms a very nice shiney, crisp surface. I sometimes dust it wiht just a bit of powered sugar through a dollie to make it pretty, but usually not. A scoop of vanilla or coffee ice cream on top, is always an option in this house:

WEARY WILLIE CAKE

1 c. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1 c. sugar
1 egg
milk
1 1/2 tsp. vanilla
2 sq. chocolate (melted together with butter)
2 T. butter

1. Sift dry ingredients in bowl.
2. In measuring cup, add enough milk to beaten egg to make 1 c. liquid
3. Add to dry ingredients along with vanilla and beat well.
4. Add melted chocolate and butter; mix well.

5. Pour into greased and floured 8" baking pan.

Bake for about 30 minutes in 350 degree oven (until top bounces back and pick inserted comes out clean).

Thanks katkitty for this recipe! I am always on the lookout for recipies that have blackberries in them! I planted 4 "thornless" blackberry bushes this year and need to find ways to use them up starting next year!!
