You want to make sure they're well scrambled so that there's no explosion!

Coffee Cup Scrambled Eggs in the Microwave

2 eggs per serving, or just egg whites, or egg substitute
2 T milk per serving
Salt and pepper

Coat a 12-oz microwave-safe custard cup or coffee mug with cooking spray; make sure the spray covers all the insides of the cup, as the eggs will rise as they cook.

Add eggs, milk, salt, and pepper, if desired; beat with a fork until well blended. Cook on full power, for 35 seconds; stir. Continue microwaving until eggs are almost set, 30 to 45 seconds longer.

Note: Microwave ovens vary. Cooking times may need to be adjusted.

Variation: After cooking, top with 2 tablespoons shredded cheddar cheese or any cheese of your choice. A little salsa is good sometimes, too.

This is the best way to make scrambled eggs. Have been doing it like this for years. No mess no fuss. They are very soft and creamy made this way.

I've been doing this for ages. I use a broad bottomed soup bowl, not a coffee cup. I butter the inside of the container first since I don't care for the taste of the nonstick spray. Anyway, using a soup bowl gives me a circular finished product that fits on an english muffin or toast. Top with a slice of cheese and some ham or bacon and it's a quick breakfast sandwich.

We make egg McMuffins this way... I use a soup mug (larger than a coffee mug) and crack an egg, piercing the yolk with a toothpick or tip of a knife. (spray the mug first with butter spray)... Microwave for 1 minute.... It slides right out of the mug and is a perfect fit for the muffin.....

Hungry Girl recipes are big on this. I like to add a little sugar free syrup and a small turkey sausage cut up to some egg beaters and low fat cheese.

Love making eggs this way too. I also on some mornings just add in a triangle of any flavor "laughingcow" cheese, makes them nice and creamy with the swiss flavor and spicy with the chipotle. Enjoy!

Beebee2-thank you for posting this easy way to fix scrambled eggs! I have never tried them in the microwave, but this is day 2 that I have made them for myself and love them cooked this way! So easy and no extra dishes to clean :)
