Make-Ahead Potatoes

****These can be made the day before and then reheated. If you make them ahead of time just be sure they are kept covered in the fridge.****

6-9 medium potatoes

1/4 cup butter

1 can cream of chicken soup

1 pint sour cream

1 1/2 cups grated cheddar cheese

1/4 cup chopped onion

2 tablespoons melted butter

1 cup crushed corn flakes

Boil potatoes whole. Cube. Saute onions in the 2 tablespoons melted butter. Heat butter and soup. Turn off heat. Add sour cream and onion. Add potatoes. Mix well. Put in a 9 x 13 inch pan. Top with corn flakes. Bake at 350* for about 45 minutes.
