What Are Your Favorite Campfire Foods?

I think we’ve had an action-packed Outdoor Grilling and Summer Entertaining month on In the Kitchen with David, don’t you? We celebrated Independence Day, farmers’ markets, county fairs, and picnics. And this Sunday’s final ode to July is…camping! Grab your tents, sleeping bags, and marshmallow sticks. We’re off to have some outdoor fun!
 
Speaking of fun, my recipe for this Sunday is sure to put a smile on everyone’s face. Have the kids help you make these before you go!
 
Chocolate Hazelnut No-Bake Cookies
 
Chocolate Hazelnut No-Bake Cookies
 
This recipe is prepared with the Lock & Lock 3-Piece Color Bowl Set (K36479).

Ingredients:
 
1/2 cup toasted chopped hazelnuts
2-1/3 cups quick oatmeal
1 (14-oz) can sweetened condensed milk
1-1/4 cup semisweet chocolate chips
1/3 cup chocolate hazelnut spread
1 tsp vanilla extract
 
Directions:
 
Line baking sheets with waxed or parchment paper. Place the oats and chopped toasted hazelnuts in a mixing bowl. Set aside.
 
Combine the condensed milk and chocolate chips in a saucepan and cook over low heat, stirring constantly, until the chocolate is completely melted. Remove the pan from the heat, add the chocolate hazelnut spread and vanilla, and stir until completely incorporated. Add the oats and chopped hazelnuts to the chocolate mixture and mix until the oats are fully coated with chocolate.
 
Drop the mixture (2 Tbsp for each cookie) onto the lined baking sheets. Let the cookies set until cooled and hardened.
 
While these cookies are certainly sweet (travel-friendly) treats, they do offer some nutritional benefits thanks to all those oats and the hazelnuts. Before the kids go off fishing, kayaking, or hiking, have them eat a few cookies. They’ll be happy to! My only word of caution is watch how you pack these. Instead of piling them up in a big container like your average cookie, you’ll need to arrange these cookies in layers. In fact, I never take the cookies off the parchment paper (where you place them to set). I layer the cookies (on the paper) on top of each other, and that prevents them from sticking to one another…which is bound to happen in the summer!

I think my favorite is banana boats. You slit a banana on the inside curve but only into the flesh of the banana and then insert chocolate chips and mini marshmallows, then wrap in foil and place into warm coals. The chocolate and marshmallows melt for a delicious banana dessert.

I love anything cooked in a "Pie Iron". Historically you take butter bread and pie filling and cook it over the fire. Dust with sugar and cinnamon....yummy. We also made a "Pizza" version of this for lunch or dinner from time to time. Lots of good camping memories in our family.

Hobo Stew-Cooked in a cast iron pot on an open fire-cant beat it or duplicate it at home-you brown hamburger meat or whatever y like for stew-use canned cambpells vegie soup-onions-some tomatoes or more potatoes if you like but not necessary and let it simmer-salt and pepper to taste-omg delicious

Angels on horseback-prepared bisquik batter like y making biscuits-wrap it around a stick and place bacon and a hunk of cheese and roast it over a campfire-

Fruit Toast-you make a stick to support the toast-butter the bread-use cinnamin and sugar and butter-toast one side over an open campfire-turn it over and put peaches-or whatever you like and toast the other side - I make it at home but it loses something not being over the campfire.

Hi David,

My favorite campfire foods are hotdogs and marshmallows. Funny story: when my boys were little and it was the middle of winter, we would have a picnic in front of the fireplace and toast hotdogs and marshmallows in the fireplace. It was great fun and made for some good memories too.

Bannana Boats-Pull back one section of peel, scoop out part of the flesh and refill with chocolate chips and and mini marshmellows. It melts into a warm, gooey, sweet treat.

A simple foil dinner I made when I was a Girl Scout. On a piece of foil, place a hot dog, a few canned potatoes, and a few spoonfuls of corn. Season with salt and pepper. Wrap and seal tightly. Place on a grill over the campfire...Roast till done. It is still a gourmet meal for me! :0)

Hi there David! I guess I'm an old fashioned girl because my favorite campfire food has to be s'mores! There is just nothing better when sitting around a fire then to have an ooey gooey s'more!! I have been loving the summer themes and shows! All your shows are fantabulous though! :)

My favorite campfire food has to be cooking breakfast over the open fire in a very seasoned cast iron grill. Nothing like smelling bacon & eggs cooking 1st thing in the morning {#emotions_dlg.w00t}

OK, this probably sounds way too gourmet for camping. But we love to saute shrimp over a fire in a cast iron skillet. We started doing this years ago, and it's become a tradition. We don't put up a tent unless we brought along the shrimp. But we also bring along the hot dogs!

My fave campfire food is BREAKFAST. It has to be cooked over the open fire. Eggs, (cooked in the bacon grease of course!!) bacon, home fries/hash browns and of course, the old fashioned "perk" coffee pot going strong next to the cast iron pan. And of course toast on long skewers held over the fire. Love ya David and please tell Mary we love her too. I have the same sense of humor as you both. Wish we were all neighbors. See you Sunday.
