What do you do with leftover taco meat?

I have 1lb. of leftover taco meat & I don't know what to do with it.

I would just hate to throw it out b/c meat is so high. Any ideas? {#emotions_dlg.crying}

I take it you mean cooked meat that has taco seasoning? If it's cooked, you could wrap it up tight & freeze it.

Make a taco salad..I do that with the leftover fixins.

My kids love when I make nachos with leftover taco meat. Just put some chips on a plate, put on the desired amount of meat, top with cheese and jalepeno peppers and heat in microwave until cheese is melted. Serve with salsa.

Another favorite for teenagers is to make "walking" tacos. You need to buy the individual bags of Fritos. You just open the bag, add your meat, some cheese and they eat it out of the bag with a spoon. Gross, I know, but teenage boys, especially, love it.

Roll refrigerated biscuit flat, add meat to 1/2 of dough with some of your favorite shredded cheese, pull the other 1/2 of dough over the top of you meat mixture and seal edges, cut small slit in top of dough, brush with melted butter, bake until golden brown.

I always make more taco meat than we will use in one meal because it is so versatile! I use the same type of seasoned "Mexican meat" made with ground beef or ground turkey for tacos, enchiladas, nachos, burritos, and various spicy Mexican casseroles. Of course, you can always freeze the leftovers to use later, but........ The meat makes a great taco salad, reheated and spread over mixed salad greens with tomatoes and onions, grated cheese, salsa, sour cream, and crumbled toasted nacho chips. It makes a wonderful hot dog chili (I think we're having that tonight!). It is great in meaty chili with kidney beans or as the meat in veggie-beef soup.

I make a kettle full of chili with the leftover taco meat. If you had leftover refried beans, chopped tomatoes, onions, etc. I add that too. Leftover shredded cheese makes a great topping for the chili. Enjoy.

or....

Combine the meat, a can of rotele (sp?) tomatoes, refried beans (can omit) and velvetta cheese.....microwave or bake and you have a great dip.

We usually just make more tacos with it. My kids love it because they can have a few tacos for lunch for the next day or two. They just put a little meat in the shell, pop it in the microwave for about 30 seconds, take it out and then finish building their taco. It's super fast and easy. By putting the meat into the shell and then heating both in the microwave it eliminates the need to bake the shells for 5 minutes.

Make more tacos! :) I could eat 'em every day. Whenever I make tacos, which isn't very often, I just figure that I will have 4 days of tacos from one lb of ground beef. So I just make that amount of everything else. Then each day I just heat up a couple of tortillas, warm up the meat, and everything is ready to go.

Another thing, if you have a Foodsaver, is that you can make up extra meat and portion it out however you would want to, freeze it, then vacuum seal it in packages. So if you, unlike me, wouldn't want to eat tacos for 4 days, you can have them other times throughout the year. For me, however, it is more practical to do it all in a row because a package of tortillas would, otherwise, go bad on me before I could use them.

ITA! I make a great Taco Salad from Taste of Home. It is always requested for picnics!

ETA That I forgot to mention that I omit the green chilies and we prefer to use Fritoes rather than Taco Chips.

7-10 layer dip. I mix the green chilis and the refried beans in with the meat. There is never any of that left over.

I only make about a pound altogether and whatevers leftover I put in the fridge because my son will eat it later that night or the next day.

I put it over whole wheat pasta with a bit of tomato-based spaghetti sauce. (I heat the taco meat and sauce separately). We put black beans in our taco meat so the dish is very similar to Cincinnati Chili. I put a few raw green onion pieces on top and my DH also adds cheese to his. We just had this for dinner on Sunday.

Definitely consider freezing it. It freezes very well and tastes even better the second time around. Smile You can also use it to top baked potatoes or in recipes from some of the other wonderful suggestions.

Spoon it on a bun and dress it like a taco with lettuce, tomatoes, cheese, taco sauce, etc. Makes a great Taco Burger.
