Help! What to serve with stuffed peppers?

I'm having company tomorrow, and making a great recipe for stuffed peppers, which is slightly spicy (has Rotel tomatoes and green chilis in it). What are good ideas to serve with them? The peppers have ground beef and rice in them, also.

I would go with a salad. You have the protein & carb covered. I cool salad would snicely with the heat & spice.

I always love scalloped potatoes with stuf. peppers.

Maybe a bit of cool fruit in the salad, but a salad and corn bread sounds just right to me too.

At our house......stuffed peppers, mashed potatoes and salad. It's a big favorite at our house...plus, the potatoes taste great with the tomato sauce.

Food groups aside (LOL), I always have stuffed peppers, mashed potatoes, corn and salad. The red sauce is great on the potatoes.

Restaurants always seem to serve them with mashed potatoes. YUM!Smile

I like them with mashed potatoes too along with cole slaw. A salad sounds good as well. I'm hungry now.

That sounds good. I like corn on the cob or whole kernal (canned or frozen) corn with the stuffed peppers too. I would serve the peppers, salad and corn and dinner rolls. (I would choose a sour french dinner roll.)

I often serve them with baked potatoes, corn, French bread and dessert like fruit pie, or cobbler. (The peppers, corn, potatoes and cobbler can all be cooked at the same time/temp.)

I'm late to this pepper party, but I like something green like baby lima beans. The frozen ones in the grocery store are fine if you add extra salt/seasoning. I also like corn with stuffed bell peppers. And since yours may be a bit spicy, a cold sweet fruit salad would probably be nice...for those who need a bit of cooling off. HA!

I figure I've covered carbs, veggies, and protein with this dish. So for just us I have cottage cheese and a dish of some kind of fruit, fresh in season. Maybe that's not enough for company. I love using Rotel with the green chilis, it livens up any tomato based dish.

After the peppers are done, I always add cooked elbow macaroni to the sauce around the peppers. Serve immediately. Thee macaroni makes the meal more filling. I learned this tip from my ex-MIL.

I would serve bread and butter with it. Maybe even a salad. Sounds delicious to me anyhow.

i never fix anything with stuffed peppers. but if i was having company, god forbid, i would probably have mashed potatoes and that salad sounds good.

We make our stuffed peppers with sausage meat, onions, grated parmiggiano, smoked mozzarella and of course rice. (No tomato sauce in our stuffed peppers in our part of Italy). So we make sauteed broccolli rabe on the side. And we always have Italian bread, its our staple. But I have had the red peppers with Tomato sauce (like those too) and If i were to serve it, I would probably do so with potatoes of some kind (scalloped, quiche, pie) and the green salad, there are always green salad lovers at every table.

Suggestions sound good either way, I Love "stuffed" anything hahaha.

I always have a salad and a loaf of Italian bread with mine. Either garlic or regular.
